Golden Skillet Potato Pancakes
Crispy and golden on the outside, tender and savory inside, these potato pancakes are an easy comfort-food favorite.
Ingredients

4 medium russet potatoes, peeled

1 small onion

2 large eggs

¼ cup all-purpose flour

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon garlic powder

3–4 tablespoons vegetable or olive oil, for frying
Instructions
1. Grate the Potatoes
Grate the potatoes and onion using the large holes of a box grater. Transfer them to a clean kitchen towel and squeeze out as much liquid as possible.
2. Make the Batter
Place the potatoes and onion in a bowl. Add the eggs, flour, salt, pepper, and garlic powder. Mix until evenly combined.
3. Heat the Skillet
Heat 2 tablespoons of oil in a large skillet over medium-high heat.
4. Form the Pancakes
Scoop about ¼ cup of the potato mixture into the skillet for each pancake. Flatten gently with a spatula.
5. Fry Until Golden
Cook for about 3–4 minutes per side, adding a little more oil as needed, until the pancakes are deeply golden and crisp.
6. Drain and Serve
Transfer to a paper-towel-lined plate to remove excess oil. Serve immediately.
