No oven is needed—the refrigerator does all the work, transforming the cookies into soft, cake-like layers while the strawberry flavor soaks into every bite.

Ingredients

For the strawberry mixture

  • 1½ lbs (680 g) fresh strawberries
  • ¼ cup (50 g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice

For the whipped cream

  • 2 cups (480 ml) heavy whipping cream, chilled
  • ½ cup (60 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 8 oz (225 g) cream cheese, softened, optional

For the layers

  • 24–30 graham crackers
  • ½ cup strawberry jam, optional
  • ½ cup sliced strawberries, for decorating

Instructions

  1. Prepare the strawberries.
    Wash the strawberries and dry them thoroughly. Remove the stems and slice the berries into thin, even pieces.Place them in a bowl with the granulated sugar, vanilla, and lemon juice. Gently toss and let them sit for 10–15 minutes.
  2. Make the whipped cream.
    Pour the cold heavy cream into a large bowl. Add the powdered sugar and vanilla.Beat with an electric mixer until soft peaks form.
  3. Make it extra creamy.
    For a thicker, cheesecake-style filling, beat the softened cream cheese in a separate bowl until smooth.Gently fold the whipped cream into the cream cheese until light and fluffy.

    If you prefer a lighter dessert, simply use the whipped cream on its own.

  4. Prepare the dish.
    Line an 8×8-inch or 9×9-inch baking dish with parchment paper, or use a glass serving dish if you plan to serve the cake directly from the dish.
  5. Add the first cookie layer.
    Arrange a single layer of graham crackers across the bottom. Break some crackers as needed to fill any gaps.
  6. Add strawberry jam.
    Spread a very thin layer of strawberry jam over the crackers, if using.
  7. Add the cream.
    Spread about one-third of the whipped cream mixture evenly over the crackers.
  8. Add strawberries.
    Arrange a layer of sliced strawberries over the cream.
  9. Repeat.
    Continue layering:Graham crackers → cream → strawberries

    Repeat until all the ingredients are used, finishing with a generous layer of cream.

  10. Decorate the top.
    Arrange the reserved strawberries over the top. You can also add crushed graham crackers, white chocolate shavings, or a drizzle of strawberry sauce.
  11. Chill thoroughly.
    Cover the dish tightly with plastic wrap and refrigerate for at least 6 hours, preferably overnight.This step is essential. As the cake chills, the graham crackers absorb moisture from the cream and strawberries and become soft and cake-like.
  12. Slice and serve.
    Once fully chilled, cut into squares with a sharp knife and serve cold.

  • Use ripe but firm strawberries. Very soft berries can release too much liquid.
