Ingredients
- 4 cups broccoli florets
- 2 cups cauliflower florets
- 1 large carrot, thinly sliced
- 1 small zucchini, diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1½ cups (360 ml) milk
- ½ cup (120 ml) heavy cream
- 1 teaspoon Dijon mustard
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- 1½ cups (150 g) shredded cheddar cheese
- ½ cup (50 g) shredded mozzarella
- ¼ cup (25 g) grated Parmesan

- 2 tablespoons Parmesan
Instructions
- Preheat the oven.
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish. - Blanch the vegetables.
Bring a large pot of salted water to a boil. Add the broccoli, cauliflower, and carrots.Cook for 3–4 minutes, just until they begin to soften but are still slightly crisp.
Drain very well and set aside.
- Cook the onion and zucchini.
Melt the butter in a large skillet over medium heat. Add the onion and cook for 3–4 minutes, until softened.Add the zucchini and garlic and cook for another 2 minutes.
- Make the creamy sauce.
Sprinkle the flour over the vegetables and stir continuously for about 1 minute.Slowly whisk in the milk and heavy cream. Continue stirring until the mixture begins to thicken, about 3–5 minutes.
- Season the sauce.
Stir in the Dijon mustard, salt, black pepper, and garlic powder. - Add the cheese.
Reduce the heat to low and stir in 1 cup cheddar, ½ cup mozzarella, and the Parmesan.Stir until the cheese is melted and the sauce is smooth.
- Combine the vegetables and sauce.
Add the blanched broccoli, cauliflower, and carrots to the skillet. Gently stir until all the vegetables are coated. - Transfer to the baking dish.
Pour the mixture into the prepared casserole dish and spread it evenly. - Add the cheese topping.
Sprinkle the remaining ½ cup cheddar over the top.If using the crunchy topping, combine the breadcrumbs, melted butter, and Parmesan, then sprinkle evenly over the cheese.
- Bake.
Bake uncovered for 25–30 minutes, until the casserole is bubbling around the edges and the top is golden brown. - Broil for extra color.
If desired, place the casserole under the broiler for 1–2 minutes at the end to create an extra-golden cheese crust. Watch carefully so it doesn’t burn. - Rest and serve.
