No-Bake Lemon Dazzling Blueberry Cream Cake

Ingredients
For the biscuit crust
- 2½ cups (250 g) digestive biscuits or graham crackers
- ½ cup (115 g) unsalted butter, melted
- 2 tablespoons granulated sugar
- 1 teaspoon lemon zest
- Pinch of salt
For the lemon cream filling
- 16 oz (450 g) full-fat cream cheese, softened
- 1 cup (240 ml) heavy whipping cream, cold
- ¾ cup (150 g) granulated sugar
- ½ cup (120 g) sour cream or Greek yogurt
- ¼ cup (60 ml) fresh lemon juice
- 1 tablespoon finely grated lemon zest
- 2 teaspoons vanilla extract
- Pinch of salt
For the blueberry compote
- 2 cups (300 g) fresh or frozen blueberries
- ⅓ cup (65 g) granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1½ teaspoons cornstarch
- 1 tablespoon cold water
For the blueberry swirl
- ½ cup cooled blueberry compote
- 2 tablespoons fresh blueberries, lightly crushed
For decoration
- 1 cup fresh blueberries
- Thin lemon slices or lemon curls
- Whipped cream
- Lemon zest
- Powdered sugar, optional
- Fresh mint, optional
1. Prepare the biscuit crust
Crush the digestive biscuits until they resemble fine crumbs.
Add the melted butter, sugar, lemon zest, and salt.
Mix thoroughly.
The mixture should resemble damp sand and hold together when pressed.
Line the bottom of a 9-inch (23 cm) springform pan with parchment paper.
Pour the crumb mixture into the pan.
Press it down firmly and evenly using the bottom of a glass or measuring cup.
Pay particular attention to the edges.
Place the crust in the refrigerator while preparing the filling.
2. Make the blueberry compote
Place the blueberries, sugar, lemon juice, and lemon zest in a saucepan.
Cook over medium heat for about 6–8 minutes.
The blueberries will soften and release their juices.
Gently crush some of them with the back of a spoon while leaving some berries whole.
Mix the cornstarch with the cold water in a small bowl.
Pour it into the blueberry mixture while stirring.
Cook for another 1–2 minutes, until the sauce thickens.
Remove from the heat.
The compote should be thick and glossy rather than runny.
Transfer it to a bowl and allow it to cool completely.
For a completely smooth blueberry sauce, blend the compote and strain it through a fine-mesh sieve.
3. Prepare the lemon cream
Place the softened cream cheese in a large mixing bowl.
Beat until completely smooth.
Add the sugar and beat for another 2 minutes.
Add the sour cream or Greek yogurt, lemon juice, lemon zest, vanilla, and salt.
Beat until smooth and creamy.
Scrape down the sides of the bowl several times to make sure everything is incorporated.
The filling should have a strong but pleasant lemon flavor.
4. Whip the cream
Place the cold heavy cream in a separate bowl.
Beat until medium-stiff peaks form.
The cream should be thick and fluffy but not grainy.
Add approximately one-third of the whipped cream to the lemon cream-cheese mixture.
Fold gently.
Add the remaining whipped cream in two additions.
Fold carefully with a spatula until the mixture is light, fluffy, and completely combined.
Don’t beat the mixture after adding the whipped cream.
5. Add the first layer
Remove the chilled crust from the refrigerator.
Spread approximately half of the lemon cream over the crust.
Smooth it with an offset spatula.
Don’t worry about making it perfectly flat yet.
6. Add the blueberry layer
Spoon approximately ¾ cup of the cooled blueberry compote over the lemon cream.
Spread it into a relatively thin layer.
Leave about ½ inch around the edge so the blueberry layer doesn’t run out of the sides.
Add the remaining lemon cream.
Smooth the top carefully.
7. Create the dazzling blueberry swirl
Take the remaining cooled blueberry compote.
Drop small spoonfuls across the surface of the cake.
Use the tip of a knife, toothpick, or wooden skewer to make gentle swirling motions.
Create loose curves, spirals, and figure-eight patterns.
Don’t overwork it.
You want distinct ribbons of brilliant purple-blue running through the pale lemon cream.
For an especially dramatic appearance, place a few individual blueberries across the surface and gently press them halfway into the cream.
8. Chill
Cover the cake carefully.
Refrigerate for at least 6–8 hours.
For the cleanest slices, refrigerate overnight.
This long chilling period allows the cream cheese filling to firm up and the flavors to develop.
9. Decorate
When you’re ready to serve, carefully remove the sides of the springform pan.
Run a warm knife around the edge if necessary.
Decorate the top with fresh blueberries.
Pipe or spoon small swirls of whipped cream around the edge.
Add thin curls of lemon zest or lemon slices.
Finish with a few mint leaves if desired.
For a delicate finish, dust very lightly with powdered sugar.
10. Slice
Dip a sharp knife in hot water.
Dry it thoroughly.
Slice the cake.
Clean and rewarm the knife between cuts for neat, professional-looking slices.
Each slice should show beautiful layers of:
buttery biscuit → creamy lemon filling → blueberry ribbon → lemon cream → blueberry marble.
Tips for a Perfect No-Bake Cake
Use full-fat cream cheese
Low-fat cream cheese contains more water and can result in a softer filling.
Full-fat cream cheese gives you a much richer and more stable cake.
Cool the blueberry compote completely
Warm blueberry sauce can melt the whipped cream and make the filling loose.
It should be completely cool before assembling.
Don’t overwhip the cream
Stop once you reach medium-stiff peaks.
Overwhipped cream can become grainy and difficult to fold smoothly.
Give it enough time to chill
Six hours is the minimum I’d recommend.
Overnight is ideal.
A rushed no-bake cheesecake often hasn’t had enough time to firm up properly.
Extra-Lemony Version
For a stronger lemon flavor, add:
- 1 extra tablespoon lemon zest
- 1 tablespoon additional lemon juice
- ½ teaspoon lemon extract
You can also add a thin layer of homemade lemon curd between the lemon cream and blueberry compote.
This creates a spectacular lemon-blueberry cheesecake flavor.
White Chocolate Lemon Blueberry Version
For a richer and more luxurious cake, melt 5 oz (140 g) white chocolate.
Allow it to cool slightly.
Beat it into the cream cheese mixture before folding in the whipped cream.

Blueberry Lemon Curd Layer
For an even more impressive cake, make a thin lemon curd layer.
Combine:
- ½ cup lemon curd
- 2 tablespoons blueberry compote

Make-Ahead Instructions
This cake is ideal for making ahead.
Prepare it the day before serving and keep it refrigerated.
You can decorate it several hours before serving, but for the freshest appearance, add the fresh blueberries and whipped cream shortly before serving.
The completed cake will keep refrigerated for approximately 3 days.
Freezing
The cake can also be frozen.
Freeze it uncovered until firm, then wrap it very well and place it in a freezer-safe container.
Freeze for up to 1 month for the best quality.
Thaw overnight in the refrigerator.
Don’t thaw it at room temperature because the filling can soften unevenly.

Raspberry Lemon
Replace the blueberries with raspberries and make the same compote.
Blackberry Lemon
Use blackberries for a deeper purple color and more intense berry flavor.
