Ingredients
Creamy crab mixture
- 1 lb (450 g) lump crab meat, picked over for shells
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- ½ medium yellow onion, finely diced
- 3 cloves garlic, minced
- ½ cup (120 ml) dry white wine or seafood stock
- 1 cup (240 ml) heavy cream
- ½ cup (120 g) cream cheese, softened
- ½ cup (50 g) finely grated Parmesan
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- ½ teaspoon paprika
- ¼ teaspoon cayenne pepper, optional
- ½ teaspoon salt, or to taste
- ½ teaspoon freshly ground black pepper
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh dill
Optional topping
- ¼ cup grated Parmesan
- ¼ cup panko breadcrumbs
- 1 tablespoon melted butter
- 1 tablespoon chopped parsley
- Pinch of paprika
- Lemon wedges
1. Prepare the crab
Pick through the crab meat carefully and remove any pieces of shell or cartilage.
If you’re using canned crab, drain it very well.
Don’t break the crab apart too much. Keeping some larger pieces intact gives the finished dish a much better texture.
Set aside.
2. Sauté the aromatics
Heat the butter and olive oil in a large skillet over medium heat.
Add the diced onion.
Cook for 4–5 minutes, stirring occasionally, until softened and translucent.
Add the garlic.
Cook for another 30–60 seconds.
Don’t let the garlic brown heavily because it can become bitter.
3. Deglaze the pan
Pour in the white wine or seafood stock.
Scrape the bottom of the skillet with a wooden spoon to release all the flavorful browned bits.
Let it simmer for 2–3 minutes, until reduced by roughly half.
If you’re avoiding alcohol, seafood stock works beautifully.
4. Make the creamy sauce
Lower the heat to medium-low.
Add the heavy cream and softened cream cheese.
Whisk gently until the cream cheese melts into the sauce.
Add the Parmesan.
Continue stirring until the sauce becomes smooth and creamy.
Don’t let it boil aggressively.
A gentle simmer is all you need.
5. Add the flavor
Stir in:
- Dijon mustard
- Worcestershire sauce
- Lemon juice
- Lemon zest
- Paprika
- Cayenne, if using
- Black pepper
Taste before adding additional salt because crab, Parmesan, and Worcestershire sauce can all be naturally salty.
The sauce should be creamy, savory, slightly tangy, and rich without overpowering the delicate crab.
6. Add the crab
Reduce the heat to low.
Gently fold the crab meat into the sauce.
Cook for approximately 3–4 minutes, just until the crab is heated through.
Don’t stir aggressively.
You want to keep the crab in tender chunks.
Add the parsley and dill.
Taste again and adjust the lemon, pepper, or salt as needed.
7. Make the crispy topping
If you’re turning this into a baked creamy crab casserole or dip, combine the panko, Parmesan, melted butter, parsley, and paprika.
Mix until the breadcrumbs are evenly coated.
8. Optional baked finish
Transfer the creamy crab mixture to a small baking dish.
Sprinkle the Parmesan-panko topping evenly over the surface.
Bake at 400°F (200°C) for approximately 12–15 minutes, until bubbling around the edges and golden on top.
For an especially crisp topping, broil for 1–2 minutes at the end.
Watch it carefully.
9. Serve
Serve the creamy crab hot with:
- Toasted baguette
- Crackers
- Crostini
- Garlic bread
- Pasta
- Steamed vegetables
- Rice
- Baked potatoes
A squeeze of fresh lemon just before serving brightens the entire dish.
Creamy Crab Pasta
To turn this into a luxurious pasta dinner, cook 12 oz (340 g) linguine, fettuccine, or spaghetti.
Reserve about ½ cup of pasta water.
Toss the cooked pasta directly into the creamy crab sauce.
Add a splash of pasta water if necessary until the sauce coats the noodles beautifully.
Finish with fresh parsley, Parmesan, black pepper, and lemon zest.
For extra flavor, add a pinch of red pepper flakes.
Creamy Crab Dip
For a thicker party dip, increase the cream cheese to 8 oz (225 g) and reduce the heavy cream to ½ cup (120 ml).
Transfer the mixture to a baking dish.
Top with Parmesan and panko.
Bake at 375°F (190°C) for approximately 20 minutes, until hot and bubbling.
Serve with toasted bread, crackers, or sliced vegetables.
Garlic Butter Crab Version
For a stronger garlic flavor, add another 2 cloves of garlic.
You can also stir in 1 tablespoon of chopped roasted garlic near the end.
For an even richer version, replace 1 tablespoon of olive oil with additional butter.
Spicy Creamy Crab
Add:
- ½ teaspoon red pepper flakes
- ¼ teaspoon cayenne
- 1 finely chopped jalapeño
- A few drops of hot sauce
The heat works particularly well with the sweet flavor of crab.
Important Tips
Don’t overcook the crab. Crab meat is already cooked in most preparations. It only needs to be warmed through.
Keep the sauce at a gentle heat. Boiling cream aggressively can cause the sauce to separate.
Use fresh lemon. Fresh lemon juice provides a much brighter flavor than bottled juice.
Don’t overpower the crab. Garlic, Parmesan, and spices should support the seafood rather than dominate it.
Check for shells. Even high-quality picked crab can occasionally contain small shell fragments.
Storage
Refrigerate leftovers promptly in a sealed container.
Use within 2–3 days.
Reheat gently over low heat, adding a splash of cream or milk if the sauce has thickened.
Avoid boiling during reheating.
For the best texture, don’t repeatedly reheat the entire batch—warm only the portion you intend to eat.
