High-Protein Triple Berry Bake
A warm, soft, berry-packed breakfast bake with a naturally sweet vanilla-cinnamon center and plenty of protein. It sits somewhere between baked oatmeal, a breakfast cake, and a berry custard—great for meal prep and especially good served warm with Greek yogurt.Servings: 6–8

Ingredients
For the berry bake
- 1½ cups (150 g) rolled oats
- 1 cup (120 g) oat flour
- 1½ teaspoons baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- 2 large eggs
- 1 cup (240 g) Greek yogurt
- 1 cup (240 ml) milk
- ½ cup (120 g) cottage cheese, blended until smooth
- ⅓ cup (100 g) honey or maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract, optional
- 1 cup (150 g) blueberries
- 1 cup (125 g) raspberries
- 1 cup (150 g) blackberries
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
Optional protein boost
- ¼–½ cup (25–50 g) vanilla protein powder
If using protein powder, add 2–3 tablespoons additional milk if the batter becomes very thick.
For the crunchy topping
- ⅓ cup rolled oats
- ¼ cup sliced almonds
- 2 tablespoons brown sugar
- 1 tablespoon all-purpose or oat flour
- 2 tablespoons cold butter
- Pinch of cinnamon
- Pinch of salt
1. Prepare the berries
Place the blueberries, raspberries, and blackberries in a bowl.
Add the lemon juice and lemon zest.
Gently toss.
If using frozen berries, don’t thaw them first. Add them frozen to prevent them from releasing too much liquid into the batter.
Set aside.
2. Prepare the baking dish
Preheat the oven to 350°F (175°C).
Grease an 8 × 8-inch (20 × 20 cm) or similar baking dish.
For easier removal, line the bottom with parchment paper, leaving some overhang on two sides.
3. Combine the dry ingredients
In a large bowl, whisk together:
- Rolled oats
- Oat flour
- Baking powder
- Cinnamon
- Salt
- Protein powder, if using
Break up any lumps.
Set aside.
4. Make the protein-rich wet mixture
In another bowl, whisk the eggs.
Add the Greek yogurt, milk, blended cottage cheese, honey or maple syrup, vanilla, and almond extract.
Whisk until smooth.
The blended cottage cheese should disappear completely into the mixture.
This adds protein while keeping the bake moist and creamy.
5. Combine
Pour the wet mixture into the dry ingredients.
Stir gently until just combined.
Don’t overmix.
The batter should be thick but pourable.
If it seems unusually stiff—especially if you’ve added protein powder—add another splash of milk.
6. Add the berries
Fold about two-thirds of the berries into the batter.
Be gentle, particularly with raspberries and blackberries, because they can break apart easily.
Pour the batter into the prepared baking dish.
Spread it evenly.
Scatter the remaining berries over the top.
Press a few gently into the surface.
7. Make the topping
Add the rolled oats, sliced almonds, brown sugar, flour, cinnamon, and salt to a small bowl.
Add the cold butter.
Use your fingertips to rub the butter into the dry ingredients until coarse crumbs form.
Sprinkle the topping evenly over the berries.
8. Bake
Place the dish in the oven.
Bake for approximately 35–45 minutes.
The edges should be golden and set.
The center should feel firm but still slightly soft when gently pressed.
A toothpick inserted into the center should come out mostly clean, with a few moist crumbs.
If you’re using frozen berries, the bake may require an additional 5–10 minutes.
9. Rest
Remove the bake from the oven.
Let it rest for 10–15 minutes before slicing.
This is important because the center continues setting as it cools.
For a firmer, more sliceable texture, let it cool for 20–30 minutes.
10. Serve
Serve warm with:
- Greek yogurt
- Fresh berries
- A drizzle of honey
- Almond butter
- Peanut butter
- A dusting of powdered sugar
For a dessert-style breakfast, add a spoonful of whipped Greek yogurt and extra berries.
Extra-High-Protein Version
For a higher-protein breakfast, use:
- ½ cup vanilla protein powder
- 1½ cups Greek yogurt
- 1 cup cottage cheese
- 2 eggs
You may need ¼–½ cup additional milk to maintain a thick but pourable batter.
For an even more substantial serving, serve each slice with another ½ cup Greek yogurt.
Triple Berry Cheesecake Bake
For a cheesecake-inspired version, add:
- 4 oz (115 g) softened cream cheese
- 2 tablespoons powdered sugar
- ½ teaspoon vanilla
Beat them together until smooth.
Drop spoonfuls of the mixture over the batter before baking.
Swirl gently with a knife.
The result is a creamy cheesecake ribbon running through the berry bake.
Lemon Berry Version
Increase the lemon zest to 2 teaspoons.
Add 1 tablespoon lemon juice to the batter.
The bright citrus flavor pairs beautifully with all three berries.
Chocolate Berry Version
Add 2 tablespoons unsweetened cocoa powder to the dry ingredients.
Use chocolate protein powder if desired.
Add ½ cup dark chocolate chips along with the berries.
The combination of chocolate, raspberries, blueberries, and blackberries makes this taste more like dessert than breakfast.
Meal Prep
Once cooled, cut the bake into 6–8 portions.
Store in an airtight container in the refrigerator for up to 4 days.
Reheat individual portions in the microwave for 30–60 seconds.
You can also eat it cold—it becomes firmer and more cheesecake-like after refrigeration.
Freezing
Allow the bake to cool completely.
Cut into individual portions and wrap them well.
Freeze for up to 2 months.
Thaw overnight in the refrigerator and reheat gently.
Texture Tips
For a soft and creamy bake, use fresh berries and don’t overbake.
For a firmer, cake-like bake, add protein powder and bake toward the longer end of the suggested time.
For a more oatmeal-like texture, use all rolled oats instead of oat flour.
For a more cake-like texture, replace ½ cup of the rolled oats with additional oat flour.
The ideal finished bake has golden, crunchy edges, a soft vanilla center, and pockets of warm blueberry, raspberry, and blackberry throughout.
