For the soup

  • 2 tbsp extra-virgin olive oil

Instructions

1. Prepare the lentils

Place the lentils in a fine-mesh strainer and rinse them thoroughly under cold water.

Pick through them and remove any small stones or damaged lentils.

If using spinach, it will wilt within a minute or two.

Kale may need approximately 4–5 minutes.

Remove the bay leaf.

9. Add the lemon

Turn off the heat.

Stir in the fresh lemon juice.

Start with the juice of one lemon and add more if desired.

10. Finish and serve
