Healthy Vegetable Soup

This healthy vegetable soup is light, nourishing, and packed with colorful vegetables. It’s naturally hearty without being heavy, and a simple combination of garlic, herbs, tomatoes, and vegetable broth gives it plenty of flavor.
Ingredients
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 carrots, sliced
- 2 celery stalks, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 medium zucchini, diced
- 1½ cups green beans, cut into bite-sized pieces
- 1½ cups diced tomatoes, fresh or canned
- 6 cups low-sodium vegetable broth
- 1 cup water
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp smoked paprika
- 1 bay leaf
- ½ tsp black pepper
- ½ tsp salt, or to taste
- 2 cups chopped spinach or kale
- 1 tbsp fresh lemon juice
- 2 tbsp chopped fresh parsley
Optional additions
For a more filling soup, add:
- 1 cup cooked chickpeas
- 1 cup cooked white beans
- ½ cup peas
- 1 small diced potato
- ½ cup cooked brown rice
- ½ cup cooked quinoa
Instructions
1. Prepare the vegetables
Wash and chop all of the vegetables before beginning.
Keep the carrots and celery in fairly small pieces because they take longer to cook than zucchini and green beans.
2. Sauté the aromatics
Heat the olive oil in a large soup pot or Dutch oven over medium heat.
Add the onion, carrots, celery, and bell pepper.
Season with a small pinch of salt.
Cook for 6–8 minutes, stirring occasionally, until the vegetables begin to soften.
3. Add the garlic and tomato paste
Add the minced garlic and cook for about 30 seconds.
Stir in the tomato paste.
Cook for another 1–2 minutes, stirring frequently.
Cooking the tomato paste briefly gives the soup a deeper, richer flavor.
4. Add the broth and seasonings
Pour in the vegetable broth and water.
Add the diced tomatoes, oregano, basil, smoked paprika, bay leaf, black pepper, and remaining salt.
Stir well.
Bring the soup to a gentle boil.
5. Simmer the harder vegetables
Reduce the heat to medium-low.
Cover partially and simmer for approximately 10 minutes.
This gives the carrots and celery time to become tender.
6. Add the remaining vegetables
Add the zucchini and green beans.
If you’re using diced potato, add it at this stage as well.
Continue simmering for 10–12 minutes, or until the vegetables are tender but still have some texture.
Don’t overcook them—the soup is best when the vegetables retain a little bite.
7. Add beans or grains
If using cooked chickpeas, white beans, peas, rice, or quinoa, stir them in during the final 5 minutes.
Allow everything to heat through.
8. Add the greens
Stir in the chopped spinach or kale.
Cook for approximately 2–4 minutes, until wilted and tender.
Spinach cooks very quickly, while kale needs a little longer.
9. Finish with lemon
Remove the bay leaf.
Turn off the heat and stir in the lemon juice.
Taste the soup.
Add more salt, pepper, or lemon juice as needed.
The lemon helps brighten the vegetables and balances the tomato-based broth.
10. Serve
Ladle the soup into bowls.
Top with fresh parsley and, if desired, a small drizzle of extra-virgin olive oil.
Serve hot with whole-grain bread or a simple salad.
Make It More Filling
If you’re serving this as a main meal rather than a side, add a protein-rich ingredient.
Chickpea Vegetable Soup
Add 1½ cups cooked chickpeas.
They provide extra protein and fiber while making the soup substantially more filling.
White Bean Vegetable Soup
Add 1½ cups cannellini or great northern beans.
For extra flavor, add a little rosemary and Parmesan.
Lentil Vegetable Soup
Add 1 cup rinsed dried green or brown lentils along with the broth.
Increase the simmering time to approximately 25–35 minutes, until the lentils are tender.

Italian-Style
Add:

- Cannellini beans
- Fresh basil
Finish with Parmesan.

Tips for the Best Vegetable Soup
Cut vegetables evenly
Uniform pieces cook at roughly the same rate.
Don’t overcook
The vegetables should be tender but not falling apart.
Adding delicate vegetables such as zucchini and spinach later in the cooking process helps preserve their texture.
Use low-sodium broth
This gives you better control over the final salt level.
Adjust the thickness
For a brothy soup, add another cup of vegetable broth.
For a thicker soup, simmer uncovered for several extra minutes.
