🥦 Crispy Roasted Cauliflower

This easy roasted cauliflower comes out golden, crispy, and caramelized on the edges, while staying tender in the middle. It’s a simple side dish that goes with almost anything.

Ingredients

  • 1 large head cauliflower, cut into bite-size florets

  • 3 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • ½ teaspoon onion powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ¼ teaspoon chili flakes, optional

  • 2 tablespoons grated Parmesan cheese, optional

  • 1 tablespoon chopped fresh parsley, optional

  • 1–2 teaspoons fresh lemon juice

Instructions

1. Heat the oven

Preheat your oven to 425°F (220°C).

For extra-crispy cauliflower, place your empty baking sheet in the oven while it preheats.

2. Prepare the cauliflower

Cut the cauliflower into similar-sized florets so they cook evenly.

If you wash the cauliflower, dry it very thoroughly. Excess water creates steam and prevents crisping.

3. Season

Place the cauliflower in a large bowl.

Add the olive oil, garlic powder, paprika, onion powder, salt, black pepper, and chili flakes if using.

Toss thoroughly until every piece is lightly coated.

4. Arrange on the pan

Carefully remove the hot baking sheet from the oven.

Spread the cauliflower across it in a single layer.

For the crispiest results, don’t crowd the pieces. Leave a little space between them.

Place the cauliflower with some of the flat cut sides facing down. Those surfaces will develop delicious golden-brown edges.

5. Roast

Roast for 20 minutes.

Remove the pan and flip or stir the cauliflower.

Return it to the oven and roast for another 10–15 minutes, until deeply golden and crispy.

For extra browning, you can switch the oven to broil for 1–2 minutes at the end. Watch it carefully because it can burn quickly.

6. Finish

Remove from the oven.

Immediately sprinkle with Parmesan if using.

Add a squeeze of fresh lemon juice and garnish with parsley.

Serve hot.

⭐ Secrets to Extra-Crispy Cauliflower

  • Dry the cauliflower extremely well before seasoning.

  • Use enough oil to lightly coat the florets, but don’t soak them.

  • Don’t overcrowd the baking sheet.

  • Roast at a high temperature.

  • Preheating the baking sheet helps create a crisp bottom.

  • Smaller florets generally become crispier than very large pieces.

  • Don’t stir too frequently—letting the cauliflower sit against the hot pan helps it brown.

🌶️ Easy Flavor Variations

Garlic Parmesan

Add ½ cup Parmesan during the last 5 minutes of roasting and finish with fresh parsley.

Spicy

Add ½ teaspoon cayenne or 1 teaspoon crushed red pepper flakes.

Lemon Herb

Skip the paprika and add dried oregano and fresh lemon zest.

Cheesy

Sprinkle shredded cheddar or mozzarella over the cauliflower during the final 2–3 minutes.

Curry Roasted

Replace the paprika with 1 teaspoon curry powder and add a pinch of cumin.
