Winter Chowder: Just 5 ingredients. Corn and potatoes

5-Ingredient Corn & Potato Winter Chowder

Creamy, cozy, and simple—just 5 ingredients.

Ingredients

  • 3 cups potatoes, peeled and diced

  • 2 cups corn (fresh, frozen, or canned)

  • 4 cups vegetable or chicken broth

  • 1 cup milk or cream

  • 2 tbsp butter

Method

  1. Melt the butter in a large pot over medium heat.

  2. Add the potatoes and broth. Bring to a boil, then reduce heat and simmer 12–15 minutes, until the potatoes are tender.

  3. Add the corn and simmer for 3–5 minutes.

  4. Stir in the milk or cream and warm gently for another 2–3 minutes. Don’t boil.

  5. For a thicker chowder, mash some of the potatoes against the side of the pot and stir.

Tip: If you have salt and black pepper in your pantry, season to taste—they don’t need to count as the main ingredients.
