  • 4 slices bread — sourdough, white, brioche, or your favorite sandwich bread
  • 4–6 slices cheddar cheese

  • 1 tsp Dijon mustard, optional
  • Pinch of garlic powder, optional

  • 1 tbsp mayonnaise

1. Prepare the bread

Lay the four slices of bread on a cutting board.

For an especially crisp and flavorful crust, spread a very thin layer of mayonnaise on the outside of each slice.

Then spread softened butter over the mayonnaise.

Top with the remaining slices of bread, keeping the buttered sides facing outward.

3. Preheat the pan

Place a heavy skillet over medium-low heat.

Let it warm for about 1–2 minutes.

Don’t use high heat—the bread can burn before the cheese melts.

4. Start cooking

Place the sandwiches in the skillet.

Cook for approximately 3–4 minutes, without pressing down too hard.

Check underneath after about 2½ minutes.

You’re looking for a deep golden-brown crust.

5. Flip carefully

Once the first side is golden and crisp, carefully flip the sandwich.

Cook the second side for another 3–4 minutes.

6. Help the cheese melt

If the bread is perfectly golden but the cheese isn’t completely melted, reduce the heat to low.

Cover the skillet with a lid for 30–60 seconds.

The trapped heat will melt the cheese without burning the bread.

7. Rest briefly

Transfer the sandwiches to a cutting board.

Let them rest for 1–2 minutes before cutting.

Cut diagonally and serve hot.
