Crispy Cod in the Air Fryer

Air-fryer cod is one of the easiest ways to get tender, flaky fish with a beautifully seasoned, lightly crisp exterior. This version uses a simple lemon-garlic coating and a crisp Parmesan breadcrumb topping.
Ingredients
- 4 cod fillets, about 5–6 oz (140–170 g) each
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp dried parsley
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup (45 g) panko breadcrumbs
- ¼ cup (25 g) grated Parmesan cheese
- 1 tbsp melted butter
- Lemon wedges, for serving
- Fresh parsley, for garnish
Instructions
1. Prepare the cod
Pat the cod fillets thoroughly dry with paper towels.
Removing excess moisture helps the coating adhere and encourages browning.
If the fillets are very thick, try to choose pieces of similar thickness so they finish cooking at roughly the same time.
2. Make the seasoning
In a small bowl, combine the olive oil, lemon juice, minced garlic, paprika, garlic powder, dried parsley, salt, and black pepper.
Brush this mixture over both sides of the cod.
3. Make the crispy topping
In another bowl, combine the panko breadcrumbs, Parmesan, and melted butter.
Mix until the breadcrumbs are evenly coated.
Press the breadcrumb mixture gently onto the top of each cod fillet.
You don’t need a very thick coating—a thin, even layer gives you the best balance of crispness and tenderness.
Air-Fry the Cod
4. Preheat the air fryer
Preheat your air fryer to 400°F (200°C) for approximately 3 minutes.
Lightly spray or brush the basket with oil.
5. Add the cod
Place the cod fillets in the air-fryer basket in a single layer.
Leave some space between the pieces so the hot air can circulate.
Don’t overcrowd the basket.
6. Cook
Air fry at 400°F (200°C) for approximately 8–12 minutes.
The exact time depends on the thickness of the fillets.
You generally don’t need to flip the cod.
The fish is ready when it flakes easily with a fork and reaches an internal temperature of 145°F (63°C) at the thickest part.
For especially thick pieces, allow a few additional minutes.
7. Finish
Carefully remove the cod from the basket.
Let it rest for 2–3 minutes.
Finish with fresh lemon juice and chopped parsley.
Serve immediately while the topping is crisp.
Simple Lemon Butter Sauce
For an extra flavorful finish, melt together:
- 2 tbsp unsalted butter
- 1 tbsp fresh lemon juice
- 1 small garlic clove, minced
- 1 tbsp chopped parsley
Warm for about 1 minute, then spoon over the cooked cod.
Seasoning Variations
Cajun Cod
Replace the seasoning with:
- 1½ tsp Cajun seasoning
- ½ tsp paprika
- ¼ tsp garlic powder
- Black pepper to taste
Serve with lemon and a cool yogurt sauce.
Mediterranean Cod
Season with:
- 1 tsp dried oregano
- ½ tsp garlic powder
- ½ tsp paprika
- Lemon zest
- Black pepper
Top with chopped tomatoes, parsley, olives, and feta after cooking.
Garlic Parmesan Cod
Skip the paprika and add:
- ½ tsp Italian seasoning
- Extra Parmesan
- ½ tsp garlic powder
Serve with roasted vegetables and potatoes.
Spicy Cod
Add:
- ½ tsp smoked paprika
- ¼ tsp cayenne
- ½ tsp chili flakes
Serve with lime and a creamy chipotle sauce.
Tips for Perfect Air-Fryer Cod
Dry the fish first
Wet fish won’t brown as well.
Patting the fillets dry is a simple step that makes a noticeable difference.
Don’t overcook it
Cod is lean and can become dry if left in the air fryer too long.
Start checking the fish around 8 minutes, especially if your fillets are thin.
Don’t overcrowd
Air circulation is what gives the topping its crisp texture.
Cook in batches if necessary.
Use fresh or thawed cod
If using frozen cod, thaw it completely in the refrigerator and pat it very dry before seasoning.

Store leftover cod in an airtight container in the refrigerator for up to 2 days.
To reheat, use the air fryer at 350°F (175°C) for 3–5 minutes until warmed through.
Avoid microwaving if possible—the coating will become soft.
