Ingredients
For the chicken
- 2 lb (900 g) boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp onion powder
You can also use about 4–5 cups cooked shredded or chopped chicken if you already have cooked chicken available.
For the salad
- 4 cups cooked chicken, chopped into bite-sized pieces
- ¾ cup dried cranberries
- ¾ cup pecans, roughly chopped
- 2 celery stalks, finely diced
- ¼ cup finely diced red onion
- 2 tbsp fresh parsley, chopped
- 1 small apple, diced, optional
- 2 tbsp green onions, thinly sliced, optional
For the creamy dressing
- ¾ cup mayonnaise
- ½ cup plain Greek yogurt or sour cream
- 1½ tbsp honey
- 1 tbsp Dijon mustard
- 1 tbsp fresh lemon juice
- 1 tsp apple cider vinegar
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp paprika
- 1–2 tbsp milk, if needed to thin the dressing
Instructions
1. Cook the chicken
If you’re starting with raw chicken, preheat your oven to 400°F (200°C).
Pat the chicken breasts dry with paper towels.
Rub them with olive oil, then season both sides with salt, black pepper, garlic powder, and onion powder.
Place the chicken in a baking dish and bake for approximately 18–25 minutes, depending on the thickness of the breasts.
The chicken is done when the thickest part reaches 165°F (74°C).
Remove it from the oven and let it rest for about 10 minutes.
This resting period is important because it allows the juices to redistribute throughout the chicken.
Once cool enough to handle, chop the chicken into small bite-sized pieces.
You can also shred it if you prefer a softer, more scoopable chicken salad.
2. Toast the pecans
While the chicken is cooking, prepare the pecans.
Place the chopped pecans in a dry skillet over medium-low heat.
Toast them for approximately 3–5 minutes, stirring frequently.
You’ll know they’re ready when they smell fragrant and nutty and have taken on a slightly deeper color.
Watch them carefully because pecans can go from perfectly toasted to burnt very quickly.
Remove them from the skillet immediately and let them cool.
Toasting the pecans is optional, but it makes a noticeable difference. It brings out their natural oils and gives the chicken salad a deeper, richer flavor.
3. Prepare the dressing
In a medium bowl, whisk together the mayonnaise, Greek yogurt, honey, Dijon mustard, lemon juice, apple cider vinegar, garlic powder, salt, pepper, and paprika.
Taste the dressing.
If you want it sweeter, add another teaspoon of honey.
For more tang, add another small squeeze of lemon juice.
If the dressing feels too thick, add 1–2 tablespoons of milk and whisk until smooth.
The finished dressing should be creamy, tangy, slightly sweet, and savory.
4. Prepare the vegetables
Finely dice the celery and red onion.
If you’re using an apple, cut it into small cubes.
A crisp, slightly sweet apple works particularly well. Honeycrisp, Gala, Fuji, or Granny Smith are all good options.
If using Granny Smith, you’ll get a more noticeable tart flavor that balances the creamy dressing nicely.
5. Combine the chicken salad
Add the chopped chicken to a large mixing bowl.
Add the dried cranberries, toasted pecans, celery, red onion, parsley, and apple if using.
Pour the dressing over the mixture.
Using a large spoon or rubber spatula, gently fold everything together.
Don’t stir too aggressively. You want to keep the pecans crunchy and the apple pieces intact.
6. Adjust the consistency
Check the consistency once everything is mixed.
If the chicken salad seems dry, add another spoonful of mayonnaise or Greek yogurt.
If it seems too creamy, add a little more chicken, celery, or pecans.
Remember that the salad will thicken slightly after chilling.
7. Chill
Cover the bowl and refrigerate for at least 30 minutes before serving.
For the best flavor, you can let it chill for 1–2 hours.
This gives the cranberries, herbs, chicken, and dressing time to meld together.
Before serving, taste it one more time and adjust the salt, pepper, or lemon juice as needed.
How to Serve It
Croissant sandwiches
One of the best ways to serve cranberry pecan chicken salad is inside buttery croissants.
Slice the croissants in half and add a generous scoop of chicken salad.
For extra freshness, add:
- Butter lettuce
- Baby spinach
- Thin cucumber slices
- A few extra cranberries
- Fresh parsley
The buttery croissant works beautifully with the sweet cranberries and creamy filling.
Classic sandwich
Spread the chicken salad between two slices of soft bread.
Brioche, sourdough, multigrain, white sandwich bread, and wheat bread all work well.
For a little crunch, add lettuce and thinly sliced cucumber.
Lettuce cups
For a lighter option, spoon the chicken salad into large romaine, butter lettuce, or iceberg leaves.
Top with a few chopped pecans and fresh parsley.
Salad bowl
Serve a scoop over mixed greens with sliced apple, cucumber, and additional cranberries.
A light drizzle of lemon vinaigrette over the greens provides a nice contrast to the creamy chicken salad.
Crackers
For an easy appetizer or snack, serve the chicken salad with sturdy crackers.
It also makes a great filling for small crostini at parties.
Delicious Variations
Creamy Grape & Cranberry Chicken Salad
Add ½–1 cup halved red or green grapes.
The juicy grapes provide a lovely contrast to the crunchy pecans and chewy cranberries.
Apple Pecan Chicken Salad
Use a full cup of diced crisp apple and reduce the cranberries slightly.
This gives the salad a fresher, crunchier flavor.
Orange Cranberry Chicken Salad
Add 1 tsp finely grated orange zest to the dressing.
You can also replace half of the lemon juice with fresh orange juice.
The orange pairs particularly well with the dried cranberries.
Maple Pecan Chicken Salad
Replace the honey with 1½ tbsp pure maple syrup.
This makes the dressing slightly richer and gives it a wonderful autumn-inspired flavor.
Herb Chicken Salad
Increase the fresh herbs and add a tablespoon of chopped fresh dill or tarragon.
Tarragon is particularly good if you’re looking for a more sophisticated, slightly French-style chicken salad.
Tips for the Best Chicken Salad
Don’t overcook the chicken
Dry chicken will make the entire salad feel dry, even with plenty of dressing.
Cook the chicken just until it reaches 165°F (74°C), then let it rest.
Cut everything fairly small
The best chicken salad has a little bit of everything in every bite.
Try to cut the celery, onion, apple, and chicken into similarly sized pieces.
Toast the pecans
Raw pecans work perfectly well, but toasted pecans add significantly more flavor.
Allow them to cool completely before adding them to the salad so they retain their crunch.
Don’t overdress it
Start with most of the dressing rather than automatically adding every drop.
You can always add more, but it’s difficult to fix chicken salad that’s become overly wet.
Give it time to chill
Freshly mixed chicken salad is good, but chilled chicken salad is better.
The flavors become more balanced after resting in the refrigerator.
Make-Ahead Instructions
The dressing can be prepared up to 2 days ahead and refrigerated separately.
The chicken can also be cooked and refrigerated ahead of time.
For the best texture, combine everything a few hours before serving.
If you’re making it for a party, prepare the chicken salad earlier in the day and keep it refrigerated until serving.
Storage
Keep the finished chicken salad refrigerated in an airtight container.
It is best consumed within 3–4 days.
Do not leave it sitting at room temperature for extended periods, particularly at parties or outdoor gatherings.
If you’re serving it buffet-style, place the serving bowl over a larger bowl of ice to keep it chilled.
A Great Flavor Balance
What makes this version work is the contrast between creamy, crunchy, sweet, savory, and tangy:
- Chicken provides the savory base.
- Cranberries bring chewy sweetness.
- Pecans provide buttery crunch.
- Celery adds freshness and texture.
- Apple adds crisp sweetness.
- Dijon and lemon keep the dressing from becoming too rich.
- Honey rounds out the tanginess.
For the best sandwich, spoon the chilled chicken salad onto a buttery croissant, add a little crisp lettuce, and finish with a few extra toasted pecans.
