Cookies Made From Brownie Mix

These brownie mix cookies are soft, chewy, rich, and incredibly easy to make. With just a few extra ingredients, a boxed brownie mix turns into delicious chocolate cookies.

Ingredients

1 box brownie mix — about 18–20 oz (510–570 g)
2 large eggs
⅓ cup vegetable oil
½ cup chocolate chips
1 teaspoon vanilla extract
A pinch of salt
Powdered sugar, optional

Instructions

1. Preheat the Oven

Preheat your oven to 175°C (350°F).

Line a baking sheet with parchment paper or lightly grease it.

2. Make the Cookie Dough

Add the brownie mix, eggs, vegetable oil, vanilla, and salt to a large bowl.

Stir until everything is combined and a thick, sticky dough forms.

Fold in the chocolate chips.

3. Chill the Dough

For thicker, chewier cookies, refrigerate the dough for 20–30 minutes.

This also makes it easier to scoop.

4. Shape the Cookies

Scoop approximately 1½ tablespoons of dough for each cookie.

Place the dough balls on the prepared baking sheet, leaving about 5 cm (2 inches) between them because they will spread.

5. Bake

Bake for approximately 9–12 minutes.

The edges should look set while the centers still look slightly soft. Don’t overbake—the cookies will firm up as they cool.

6. Cool

Let the cookies sit on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Optional Additions

Make them your own by adding:

Chopped walnuts or pecans
White chocolate chips
Peanut butter chips
Mini marshmallows
Shredded coconut
A sprinkle of flaky sea salt

Storage

Store the cooled cookies in an airtight container at room temperature for 3–4 days.

Quick Tip

For extra fudgy cookies, slightly underbake them and let them finish setting on the baking sheet. This keeps the centers soft and brownie-like.
