Moist and Flavorful Christmas Fruit Cake

Ingredients

For the Fruit Mixture

  • 2 cups mixed dried fruits

  • ½ cup raisins

  • ½ cup chopped dates

  • ½ cup chopped candied cherries or mixed candied fruit

  • ½ cup orange juice

  • ½ cup apple juice

  • 1 teaspoon orange zest

For the Cake

  • 1 cup unsalted butter, softened

  • ¾ cup brown sugar

  • ¼ cup granulated sugar

  • 4 large eggs

  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg

  • ½ teaspoon ground ginger

  • ¼ teaspoon ground cloves

  • ½ teaspoon salt

  • ¾ cup chopped walnuts or pecans

  • ¼ cup milk, if needed

Instructions

1. Soak the Fruit

Place the dried fruits, raisins, dates, and candied fruit in a saucepan.

Add the orange juice, apple juice, and orange zest.

Warm over low heat for about 5 minutes, then remove from the heat.

Let the fruit cool and soak for at least 1 hour. For an even richer flavor, cover and refrigerate it overnight.

2. Prepare the Oven

Preheat the oven to 160°C (325°F).

Grease a 9-inch round cake pan or a deep loaf pan. Line the bottom and sides with parchment paper.

3. Cream the Butter and Sugar

Beat the softened butter, brown sugar, and granulated sugar until light and creamy.

Add the eggs one at a time, beating well after each addition.

Mix in the vanilla extract.

4. Combine the Dry Ingredients

In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.

5. Make the Batter

Gradually add the dry ingredients to the butter mixture.

Mix gently until just combined.

If the batter seems extremely thick, add the milk a tablespoon at a time.

6. Add the Fruit and Nuts

Drain any excess liquid from the soaked fruit if necessary.

Fold the fruit and chopped nuts gently into the batter until evenly distributed.

7. Bake

Transfer the batter to the prepared pan and smooth the top.

Bake for approximately 70–90 minutes, depending on the depth and size of your pan.

Insert a toothpick or skewer into the center. It should come out clean or with a few moist crumbs.

If the top becomes dark too quickly, loosely cover the cake with aluminum foil during the final part of baking.

8. Cool

Allow the cake to cool in the pan for 15–20 minutes.

Remove it from the pan and let it cool completely on a wire rack.

9. Rest for Better Flavor

For the best Christmas-cake flavor, wrap the completely cooled cake tightly in parchment paper and then foil.

Let it rest in an airtight container for 1–3 days before serving. The spices and fruit flavors become deeper as the cake rests.

Tips for an Extra-Moist Cake

  • Don’t overbake the cake.

  • Soak the dried fruit before adding it to the batter.

  • Use room-temperature butter and eggs for a smoother batter.

  • Make sure the fruit is distributed evenly throughout the cake.

  • If you want a very rich cake, brush the cooled cake occasionally with a little orange juice or simple syrup while it rests.

Storage

Keep the cake tightly wrapped in an airtight container.

It can generally be kept at room temperature for several days, or refrigerated for longer storage. Individual slices can also be wrapped and frozen for up to 2–3 months.

Let refrigerated or frozen cake come to room temperature before serving for the best texture.
