🍎 Apple Pecan Cake with Caramel Glaze

A moist, warmly spiced apple cake packed with crunchy pecans and finished with a rich buttery caramel glaze.

Ingredients

For the cake

  • 2 cups all-purpose flour

  • 1½ tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1½ tsp ground cinnamon

  • ¼ tsp ground nutmeg

  • 1 cup granulated sugar

  • ½ cup brown sugar

  • ¾ cup vegetable oil

  • 3 large eggs

  • 2 tsp vanilla extract

  • 3 medium apples, peeled, cored, and finely chopped

  • 1 cup chopped pecans

For the caramel glaze

  • ½ cup butter

  • 1 cup brown sugar

  • ¼ cup heavy cream or milk

  • 1 tsp vanilla extract

  • Pinch of salt

Instructions

  1. Prepare the oven: Preheat to 175°C (350°F). Grease and flour a 9-inch Bundt or tube pan.

  2. Mix dry ingredients: Whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

  3. Mix wet ingredients: In a large bowl, whisk the granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.

  4. Combine: Gradually stir the dry ingredients into the wet mixture until just combined. Fold in the chopped apples and pecans.

  5. Bake: Pour into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.

  6. Make the caramel glaze: Melt the butter in a saucepan over medium heat. Add brown sugar and cream. Bring to a gentle boil, stirring constantly, and cook for 2–3 minutes. Remove from heat and stir in vanilla and salt.

  7. Glaze the cake: Let the cake cool in the pan for about 10–15 minutes, then turn it onto a serving plate. Pour the warm caramel glaze generously over the cake.

🍯 Tip

For an extra caramelized finish, sprinkle a handful of toasted chopped pecans over the glaze before serving. The cake is especially delicious slightly warm with vanilla ice cream.
