Pastry Layers
- 1 sheet puff pastry, thawed
- 2 tbsp granulated sugar
Vanilla Cream
- 2 cups (480 ml) whole milk
- 4 large egg yolks
- ½ cup (100 g) granulated sugar
- 3 tbsp cornstarch
- 1 tsp vanilla extract
- 2 tbsp unsalted butter
Berry Layer
- 1½ cups mixed fresh berries
- 2 tbsp granulated sugar
- 1 tbsp lemon juice

- Fresh berries
- Mint leaves
- White chocolate shavings
Instructions
1. Bake the puff pastry
Preheat the oven to 400°F (200°C).
Place the puff pastry on a parchment-lined baking sheet.
Prick it all over with a fork and sprinkle with the granulated sugar.
Bake for 12–15 minutes, until puffed and deeply golden.
Allow it to cool completely.
2. Make the vanilla cream
In a saucepan, whisk together the egg yolks, sugar, and cornstarch until smooth.
Gradually whisk in the milk.
Place over medium heat and cook, whisking constantly, until the mixture thickens to a smooth custard.
This usually takes about 5–7 minutes.
Remove from the heat and stir in the vanilla and butter.
Transfer to a bowl and cover the surface directly with plastic wrap.
Refrigerate until completely chilled.
3. Prepare the berries
Place the berries, sugar, and lemon juice in a small saucepan.
Cook over medium heat for 4–5 minutes, stirring gently, until the berries soften and release some juice.
Allow the berry mixture to cool completely.
For a smoother sauce, mash lightly with a fork.
4. Break the pastry
Once completely cool, break or cut the puff pastry into small bite-sized pieces.
Keep some pieces slightly larger for a nice crunchy texture throughout the dessert.
5. Assemble the glasses
Spoon a layer of pastry pieces into the bottom of each glass.
Add a layer of chilled vanilla cream.
Spoon a small amount of berry sauce over the cream.
Repeat the layers:
Pastry → cream → berries → pastry → cream
Finish with a few crispy pastry pieces on top.
6. Chill
Refrigerate the assembled desserts for approximately 1 hour before serving.
For maximum crunch, reserve the final pastry pieces and add them immediately before serving.
