These classic cucumber tea sandwiches are delicate, refreshing, and incredibly simple. With just four basic ingredients, they’re perfect for afternoon tea, brunches, showers, picnics, or light lunches.

Ingredients

  • 8 slices soft white sandwich bread
  • 1 large English cucumber
  • 4 oz (115 g) cream cheese, softened
  • 1–2 tbsp fresh dill, finely chopped
  • Pinch of salt, optional

Note: The core recipe uses four ingredients: bread, cucumber, cream cheese, and dill. Salt is optional.

Instructions

1. Prepare the cucumber

Wash and dry the cucumber.

Slice it very thinly—about ⅛ inch (3 mm) thick.

A mandoline makes this especially easy, but a sharp knife works perfectly.

2. Remove excess moisture

Lay the cucumber slices in a single layer on paper towels.

Sprinkle very lightly with salt if desired.

Cover with another layer of paper towels and gently press.

Let them sit for about 5–10 minutes.

This removes excess moisture and prevents soggy sandwiches.

3. Prepare the cream cheese

Place the softened cream cheese in a small bowl.

Add the chopped fresh dill.

4. Spread the bread

Lay the bread slices on a cutting board.

Spread a thin, even layer of the dill cream cheese over one side of each slice.

5. Add the cucumber

Arrange the cucumber slices over half of the bread slices.

Overlap them slightly so every bite has plenty of cucumber.

6. Close the sandwiches

Top each cucumber-covered slice with another piece of bread, cream-cheese side down.

Press very gently.

Don’t squash the bread.

7. Trim the crusts

  • 4 small squares
  • 3 fingers
  • Or 2 triangles

8. Chill

Arrange the sandwiches on a plate and cover loosely with a slightly damp paper towel, followed by plastic wrap.
