These classic Hobo Dinner Foil Packets are packed with seasoned ground beef, tender potatoes, carrots, and onions. Everything cooks together in foil, creating a hearty, juicy dinner with minimal cleanup.

Ingredients

For the packets

  • 1 lb (450 g) lean ground beef
  • 4 medium potatoes, thinly sliced
  • 3 medium carrots, peeled and sliced
  • 1 medium yellow onion, thinly sliced
  • 1 green bell pepper, sliced, optional
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp dried parsley
  • ¾ tsp salt
  • ½ tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 4 tbsp butter, divided

Optional toppings

  • ½ cup shredded cheddar cheese
  • Fresh parsley
  • Sour cream
  • Chopped green onions
  • Hot sauce

Instructions

1. Preheat the oven

Preheat your oven to 400°F (200°C).

For outdoor cooking, these packets can also be cooked over a campfire or grill.

2. Prepare the vegetables

Place the sliced potatoes, carrots, onion, and bell pepper in a large bowl.

Add the olive oil, garlic powder, onion powder, paprika, parsley, salt, and pepper.

Toss until the vegetables are evenly coated.

3. Season the beef

Place the ground beef in a separate bowl.

Add the Worcestershire sauce, a pinch of salt, black pepper, and a little garlic powder.

Mix gently until just combined.

Don’t overwork the meat.

4. Form the beef portions

Divide the ground beef into 4 equal portions.

Shape each portion into a thick patty.

You can also crumble the beef over the vegetables instead of forming patties.

Assemble the Foil Packets

5. Prepare the foil

Tear off four large sheets of heavy-duty aluminum foil.

For extra durability, use two layers of foil per packet.

Place the foil sheets on a work surface.

6. Add the vegetables

Divide the seasoned vegetables evenly among the four foil sheets.

Keep the vegetables in the center, leaving enough room around the edges to fold the packets closed.

7. Add the beef

Place one beef patty on top of each vegetable portion.

8. Add butter

Place 1 tablespoon of butter on top of each beef patty.

The butter melts into the meat and vegetables as they cook, helping keep everything moist and flavorful.

Seal the Packets

9. Fold the foil

Bring the long sides of the foil together over the food.

Fold them down tightly several times.

Then fold the short ends upward and inward to create a sealed packet.

Leave a little room inside for steam to circulate.

10. Place on a baking sheet

Arrange the packets seam-side up on a large baking sheet.

This catches any juices that might escape during cooking.

Bake

11. Cook the packets

Bake for approximately 35–45 minutes, depending on the thickness of the potatoes and beef.

The beef should reach a safe internal temperature of 160°F (71°C).

The potatoes should be fork-tender.

12. Carefully open

Remove the packets from the oven.

Let them rest for 5 minutes.

Carefully open the foil away from your face—the escaping steam will be very hot.

Add Cheese

13. Finish with cheddar

If using cheese, sprinkle approximately 2 tablespoons shredded cheddar over each packet.

Leave the foil open and return the packets to the oven for 2–3 minutes, until the cheese melts.

Alternatively, simply add the cheese after opening the packets.

Grill Version

Preheat the grill to approximately 400°F (200°C).

Place the sealed packets on the grill over indirect heat.

Cook for approximately 35–45 minutes, turning the packets carefully halfway through.

Check the beef and potatoes before serving.

Campfire Version

Use heavy-duty foil and preferably double-wrap the packets.

Place them over hot coals rather than directly in large flames.

Cook for approximately 30–40 minutes, turning occasionally.

Cooking time will vary significantly depending on the heat of the coals and the thickness of the vegetables.

Variations

Cheesy Bacon Hobo Packets

Add:

  • 4 slices cooked and crumbled bacon
  • Extra cheddar cheese

Add the bacon after cooking so it stays crisp.

Mushroom & Swiss

Add sliced mushrooms to the vegetables and replace cheddar with Swiss cheese.

BBQ Hobo Packets

Replace the Worcestershire sauce with 2 tbsp barbecue sauce.

Drizzle another tablespoon of barbecue sauce over each packet before serving.

Chicken Hobo Packets

Replace the ground beef with boneless, skinless chicken thighs cut into bite-sized pieces.

Use chicken seasoning and make sure the chicken reaches 165°F (74°C).

Tips for the Best Hobo Packets

Slice the potatoes thinly

Potatoes take longer to cook than the other vegetables.

Thin slices help everything finish at approximately the same time.

Don’t overfill the packets

Crowded packets take longer to cook and steam unevenly.

Use heavy-duty foil

It makes the packets much easier to seal and reduces the chance of tearing.
