🛒 Ingredients

For the bread pudding

  • 8 cups day-old cinnamon raisin bread, cut into 1-inch cubes
  • 3 large eggs
  • 2 large egg yolks
  • 2½ cups (600 ml) whole milk
  • 1 cup (240 ml) heavy cream
  • ¾ cup (150 g) brown sugar
  • ¼ cup (50 g) granulated sugar
  • 2 tsp vanilla extract
  • 1½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 3 tbsp melted butter
  • ½ cup raisins, optional
  • ½ cup chopped pecans or walnuts, optional

Optional cinnamon topping

  • 2 tbsp brown sugar
  • 1 tbsp melted butter
  • ½ tsp cinnamon

1. Prepare the oven and baking dish

Preheat your oven to 350°F (175°C).

Lightly butter a 9 × 13-inch baking dish.

If your cinnamon raisin bread is very fresh, spread the cubes on a baking sheet and let them sit at room temperature for about 30–60 minutes to dry slightly.

Day-old bread works best because it absorbs the custard without becoming completely mushy.

2. Prepare the custard

In a large bowl, whisk together the eggs and egg yolks.

Add the whole milk, heavy cream, brown sugar, granulated sugar, vanilla, cinnamon, nutmeg, and salt.

Whisk until the sugar is mostly dissolved and everything is evenly combined.

3. Add the bread

Place the cubed cinnamon raisin bread into the bowl of custard.

Gently toss with a spatula until all the bread pieces are coated.

Let the mixture sit for 15–20 minutes.

Give it a gentle stir once or twice during this time so the bread absorbs the custard evenly.

4. Add extra raisins and nuts

If you’d like extra texture and raisin flavor, fold in the additional raisins and chopped pecans or walnuts.

For a richer version, you can also add a handful of white chocolate chips.

5. Transfer to the baking dish

Pour the soaked bread mixture into the prepared baking dish.

Spread it into an even layer.

8. Rest

Remove the bread pudding from the oven.

🍯 Optional Vanilla Sauce

For an extra-special dessert, make a quick vanilla sauce.

Ingredients

  • ½ cup (120 ml) heavy cream
  • ¼ cup (50 g) brown sugar
  • 2 tbsp butter
  • 1 tsp vanilla
  • Pinch of salt

Instructions

Add the cream, brown sugar, butter, and salt to a small saucepan.

Heat over medium-low heat, stirring until the butter melts and the sugar dissolves.

Simmer gently for 2–3 minutes.

Remove from the heat and stir in the vanilla.

Pour the warm sauce over individual servings.


⭐ Tips for Perfect Bread Pudding

Use day-old bread. Slightly stale bread absorbs the custard beautifully.

Don’t skip the soaking time. It gives the bread time to absorb the custard all the way through.

Don’t overbake. A slightly jiggly center is desirable when it first comes out of the oven.

Use cinnamon raisin bread. It gives you layers of cinnamon and raisin flavor without needing lots of extra ingredients.

Let it rest before serving. The texture becomes richer and more cohesive as it cools slightly.

Apple Cinnamon

Fold in 1 cup finely diced apples and add another ½ tsp cinnamon.
