🛒 Ingredients

  • 1½ cups (180 g) gluten-free all-purpose flour blend — preferably one containing xanthan gum
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 large egg
  • 1¼ cups (300 ml) milk or unsweetened almond milk
  • 2 tbsp melted butter or neutral oil
  • 1 tsp vanilla extract
  • 1 tsp lemon juice or apple cider vinegar

Optional additions

  • ½ tsp cinnamon
  • ½ cup blueberries
  • ½ cup mini chocolate chips
  • 1 mashed banana

1. Mix the dry ingredients

In a large bowl, whisk together:

  • Gluten-free flour
  • Sugar
  • Baking powder
  • Baking soda
  • Salt
  • Cinnamon, if using

2. Mix the wet ingredients

In a separate bowl, whisk together the egg, milk, melted butter, vanilla, and lemon juice.

8. Flip
