Ingredients
-
4 cups corn kernels, fresh or frozen
-
4 tablespoons butter
-
2 tablespoons honey
-
2 tablespoons cream cheese
-
¼ cup heavy cream or milk
-
½ teaspoon salt
-
¼ teaspoon black pepper
-
1 tablespoon chopped fresh parsley, optional
Instructions
-
Melt the butter: Heat a large skillet over medium heat. Add the butter and let it melt.
-
Cook the corn: Add the corn and cook for 5–7 minutes, stirring occasionally, until hot and lightly browned in spots.
-
Make it creamy: Reduce the heat to low. Add the cream cheese and heavy cream. Stir until the cream cheese melts and coats the corn.
-
Add the sweetness: Stir in the honey, salt, and black pepper. Cook for another 2–3 minutes, stirring until everything is smooth and glossy.
-
Finish: Taste and adjust the salt or honey. Sprinkle with parsley if desired.
Southern-Style Tips
-
Use fresh corn in summer for the sweetest flavor.
-
Frozen corn works wonderfully and doesn’t need to be thawed first.
-
For extra richness, add another tablespoon of butter at the end.
-
A pinch of cayenne pepper gives the sweet corn a delicious little kick.
-
For a smoky version, add a little smoked paprika.
