🥔 Crispy Potato Pancakes
Ingredients

3 medium potatoes

1 small onion, finely grated

1 egg

2 tablespoons flour or cornstarch

½ teaspoon salt

¼ teaspoon black pepper

½ teaspoon red chili flakes (optional)

2 tablespoons chopped coriander

Oil, for frying
Method

Grate the potatoes and squeeze out as much water as possible using a clean kitchen towel.

Mix potatoes, onion, egg, flour, salt, pepper, chili flakes, and coriander in a bowl.

Heat 2–3 tablespoons of oil in a frying pan over medium heat.

Add a spoonful of the mixture and flatten it into a thin pancake.

Fry for 3–4 minutes per side, until golden brown and crispy.

Drain on paper towels and serve hot.
🥣 Quick yogurt dip
Mix ½ cup yogurt + a pinch of salt + chopped coriander + a little garlic. Serve alongside the pancakes.
Tip: The key to really crispy pancakes is squeezing as much moisture as possible from the grated potatoes.
