š Easy Peach Clafoutis
Peach clafoutis is a wonderfully simple French dessert with juicy peaches baked in a soft, custardy batter. Itās somewhere between a flan, pancake, and baked custardāand it takes only a few minutes to prepare.
Ingredients

4ā5 ripe peaches, sliced

3 large eggs

½ cup (100 g) granulated sugar

1 cup (240 ml) whole milk

½ cup (120 ml) heavy cream

1 teaspoon vanilla extract

¾ cup (95 g) all-purpose flour

¼ teaspoon salt
-
2 tablespoons unsalted butter, melted

½ teaspoon cinnamon, optional

Powdered sugar, for serving
Instructions
1. Prepare the oven and pan
Preheat your oven to 350°F (175°C).
Butter a 9-inch (23 cm) pie dish or shallow baking dish.
Arrange the sliced peaches in an even layer across the bottom.
You can slightly overlap the slicesāthe fruit will settle into the custard as it bakes.
2. Make the batter
In a large bowl, whisk the eggs and sugar together until smooth and slightly lighter in color.
Add the milk, heavy cream, vanilla, and melted butter.
Whisk until combined.
Gradually add the flour and salt, whisking until you have a smooth batter without large lumps.
If using cinnamon, whisk it in now.
The batter will be fairly thin, similar to pancake batter.
3. Pour over the peaches
Slowly pour the batter over the peaches.
Give the dish a gentle shake so the batter settles around the fruit.
Don’t worry if some peach slices remain visible on top.
4. Bake
Place the dish in the preheated oven.
Bake for approximately 40ā50 minutes, until:

The edges are puffed and golden.

The center is mostly set.

A knife inserted near the center comes out mostly clean.
The clafoutis will puff up considerably while baking and then naturally sink as it cools. That’s completely normal.
5. Cool slightly
Let the clafoutis cool for 15ā20 minutes before serving.
It can be served warm, at room temperature, or chilled.
Dust generously with powdered sugar just before serving.

Canned peaches: Drain them very well and pat them dry before using.
Frozen peaches: Thaw completely and drain off excess liquid before adding them to the dish.
Make-Ahead
Clafoutis can be made a day ahead and stored covered in the refrigerator. Serve it chilled or let it sit at room temperature for about 20ā30 minutes before serving.
For a particularly delicious dessert, serve a warm slice with a scoop of vanilla ice creamāthe warm peach custard and cold ice cream are an excellent combination.
