🍫 Homemade Caramel Chocolate Crunch Bars
These homemade Caramel Chocolate Crunch Bars have a buttery, crisp base, a rich chewy caramel layer, and a smooth chocolate topping. They’re similar to a homemade candy bar but are easy to make in one pan.
Ingredients
For the crunchy base

1 cup (226 g) unsalted butter, softened

½ cup (100 g) granulated sugar

1 teaspoon vanilla extract

2 cups (250 g) all-purpose flour

¼ teaspoon salt

1 cup (90 g) crisp rice cereal, lightly crushed
For the caramel layer

1 cup (226 g) unsalted butter
-
1 cup (200 g) packed brown sugar
-
1 can (14 oz / 397 g) sweetened condensed milk
-
¼ cup (60 ml) light corn syrup or golden syrup
-
1 teaspoon vanilla extract
-
¼ teaspoon salt
For the chocolate topping
-
2 cups (340 g) semisweet or milk chocolate chips
-
1 tablespoon coconut oil or vegetable shortening
Instructions
1. Prepare the pan
Preheat your oven to 350°F (175°C).
Line a 9 × 13-inch baking pan with parchment paper, leaving some parchment hanging over the sides so you can lift the finished bars out easily.
Lightly grease the parchment.
2. Make the crunchy base
In a large bowl, beat the softened butter and sugar together until creamy.
Add the vanilla and salt.
Gradually mix in the flour until a soft dough forms.
Fold in the lightly crushed crisp rice cereal. Don’t crush it into powder—you want little pieces to provide that satisfying crunch.
Press the mixture firmly and evenly into the prepared pan.
Bake for 18–22 minutes, until the edges are lightly golden.
Remove from the oven and allow the base to cool for about 10 minutes.
3. Make the caramel
While the base is cooling, add the butter, brown sugar, condensed milk, and corn syrup to a medium heavy-bottomed saucepan.
Heat over medium heat, stirring constantly.
Once the mixture begins bubbling, continue cooking for approximately 6–8 minutes, stirring constantly so it doesn’t burn on the bottom.
The caramel should become thicker and slightly darker.
Remove from the heat.
Immediately stir in the vanilla and salt.
Be very careful—the caramel will be extremely hot.
4. Add the caramel layer
Pour the hot caramel evenly over the baked base.
Use a spatula to spread it into an even layer.
Let it cool at room temperature for about 20–30 minutes, then place the pan in the refrigerator for another 30 minutes to help the caramel set.
5. Make the chocolate topping
Place the chocolate chips and coconut oil in a microwave-safe bowl.
Microwave in 20–30 second intervals, stirring well after each interval.
Continue until the chocolate is smooth and completely melted.
Alternatively, melt the chocolate gently over a double boiler.
6. Add the chocolate
Pour the melted chocolate over the chilled caramel layer.
Spread it evenly with a spatula.
If you like a little extra crunch, sprinkle the top with:

7. Chill
Place the pan in the refrigerator for 1–2 hours, or until the chocolate and caramel are firm.
Remove the bars from the pan using the parchment paper.
Let them sit at room temperature for about 10 minutes before cutting.

Use a sharp knife and run it under hot water. Dry it thoroughly, then gently slice through the bars.
Repeat between cuts.
For smaller candy-bar-style pieces, cut the 9 × 13-inch slab into about 24–30 bars.

Don’t stop stirring the caramel while it’s cooking. It can scorch surprisingly quickly.

Use milk chocolate for a sweeter candy-bar flavor or dark/semisweet chocolate to balance the caramel.
