Baked Blueberry Cottage Cheese Breakfast Bowls
These warm baked blueberry cottage cheese breakfast bowls are creamy, lightly sweet, and packed with protein. They’re easy to prepare ahead of time and make a comforting breakfast that feels a little like a cross between cheesecake and baked oatmeal.
Ingredients
- 1 cup cottage cheese
- 2 large eggs
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- ½ cup rolled oats
- ½ teaspoon baking powder
- ½ teaspoon ground cinnamon
- Pinch of salt
- ¾ cup fresh or frozen blueberries
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest, optional
- 1 tablespoon chopped nuts, optional
- A little butter or cooking spray for the bowls
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease two small oven-safe ramekins or baking dishes.
- Prepare the cottage cheese mixture. Add the cottage cheese, eggs, honey or maple syrup, and vanilla to a bowl. Whisk until well combined. For a smoother, cheesecake-like texture, blend the mixture until creamy.
- Add the dry ingredients. Stir in the rolled oats, baking powder, cinnamon, and salt. Mix until everything is evenly incorporated.
- Add the blueberries. Gently fold in about half of the blueberries, reserving the rest for the tops. If using frozen blueberries, there is no need to thaw them first.
- Fill the bowls. Divide the mixture evenly between the prepared ramekins. Scatter the remaining blueberries over the top and add a little lemon zest or chopped nuts if desired.
- Bake. Place the bowls in the oven and bake for about 25–30 minutes, or until the centers are set and the tops are lightly golden.
- Cool briefly. Let the breakfast bowls rest for about 5–10 minutes before serving. They will continue to firm up slightly as they cool.
Serving Ideas
For extra flavor, top the baked bowls with a spoonful of plain yogurt, fresh blueberries, a small drizzle of honey, or a sprinkle of chopped walnuts. A little lemon zest adds a bright contrast to the creamy cottage cheese and sweet berries.
