Note: “Anti-inflammatory” is best understood as a nutrition-focused description, not a medical treatment. The ingredients in this salad can contribute beneficial nutrients to an overall balanced eating pattern, but the salad itself doesn’t treat inflammation or disease.

Ingredients

Vegetables

  • 2 large cucumbers, thinly sliced
  • 1 medium red onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 cloves garlic, very thinly sliced
  • 1 tablespoon freshly grated ginger
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 small jalapeño, thinly sliced, optional

Pickling Dressing

  • ½ cup apple cider vinegar
  • ¼ cup water
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • ½ teaspoon turmeric
  • ½ teaspoon black pepper
  • ¾ teaspoon salt
  • ½ teaspoon red pepper flakes, optional
  • 1 tablespoon fresh lemon juice

1. Prepare the vegetables

Wash and dry all the vegetables thoroughly.

Slice the cucumbers into thin rounds.

Thinly slice the red onion and bell peppers.

Slice the garlic very thinly.

Grate the fresh ginger.

Place everything into a large glass or nonreactive mixing bowl.

Add the parsley, dill, and jalapeño if using.

2. Make the pickling liquid

In a small bowl, whisk together:

  • Apple cider vinegar
  • Water
  • Olive oil
  • Honey or maple syrup
  • Dijon mustard
  • Turmeric
  • Black pepper
  • Salt
  • Red pepper flakes
  • Lemon juice

Whisk until the honey has dissolved and the dressing is well combined.

3. Combine

Pour the pickling dressing over the vegetables.

Toss thoroughly.

Make sure the cucumber, onion, and peppers are coated evenly.

4. Let it pickle

Cover the bowl and refrigerate for at least 1 hour.

For stronger flavor, let it sit for 2–4 hours.

Give it a stir once or twice while it rests.

The onion and peppers will soften slightly while the cucumbers remain pleasantly crisp.

5. Serve

Before serving, toss again.

Taste and adjust:

  • More lemon for brightness
  • More vinegar for tang
  • More honey for sweetness
  • More black pepper or chili for heat
  • A pinch more salt if needed

Serve chilled or slightly cool.

Why These Ingredients Work Well Together

Cucumbers

Provide a refreshing, high-water, crunchy base.

Bell peppers

Add vitamin C, sweetness, color, and crunch.

Red onion

Provides strong flavor and beneficial plant compounds.

Ginger

Adds warmth and a spicy freshness.

Garlic

Adds savory depth and sulfur-containing compounds.

Extra-virgin olive oil

Provides monounsaturated fat and naturally occurring plant compounds.

Turmeric + black pepper

Turmeric provides curcumin, while black pepper contains piperine, which can increase curcumin absorption. The amount in a salad is culinary rather than therapeutic.

Extra-Crunchy Version

Add:

  • ½ cup shredded cabbage
  • ¼ cup sliced radishes
  • ¼ cup shredded carrot
  • 2 tablespoons pumpkin seeds

Add the seeds immediately before serving so they remain crunchy.

Mediterranean Version

Add:

  • ½ cup cherry tomatoes
  • ¼ cup Kalamata olives
  • 2 tablespoons crumbled feta
  • Extra parsley
  • 1 teaspoon dried oregano

Replace the apple cider vinegar with red wine vinegar.

Spicy Ginger Version

Add:

  • 1 extra tablespoon grated ginger
  • 1 sliced jalapeño
  • ½ teaspoon crushed red pepper
  • 1 teaspoon toasted sesame oil

A sprinkle of sesame seeds makes a great finishing touch.

Make It a Complete Meal

Add a protein such as:

  • Grilled chicken
  • Salmon
  • Tuna
  • Shrimp
  • Hard-boiled eggs
  • Chickpeas
  • Tofu

Serve over quinoa, brown rice, or greens.

Important Pickling Tip

This is a quick refrigerator-pickled salad, not a shelf-stable canned pickle.

Keep it refrigerated at all times.

The vegetables are not processed for long-term room-temperature storage.

Storage

Store in a clean, covered container in the refrigerator.

For the best texture, eat within 3–4 days.

The cucumbers will gradually become softer as they absorb the vinegar dressing.

Best tip

For the crispiest result, salt the sliced cucumbers lightly and let them sit for 10 minutes, then gently pat them dry before adding the dressing. This removes some excess water without making them limp, allowing the vinegar, ginger, garlic, and herbs to flavor the vegetables more intensely.
