🍓 Homemade Raspberry Swirl Cheesecake
A rich, creamy classic cheesecake with a buttery graham-cracker crust and beautiful ribbons of homemade raspberry sauce swirled throughout. It’s elegant enough for a celebration but completely doable at home.Servings: 10–12

Ingredients
Graham Cracker Crust
- 2 cups graham cracker crumbs
- ÂĽ cup granulated sugar
- ½ cup (115 g) unsalted butter, melted
- Pinch of salt
Raspberry Swirl
- 2 cups fresh or frozen raspberries
- ÂĽ cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
- 1 tablespoon water
Cheesecake Filling
- 24 oz (680 g) full-fat cream cheese, softened
- 1 cup granulated sugar
- Âľ cup sour cream, room temperature
- 1 teaspoon vanilla extract
- 4 large eggs, room temperature
- 1 tablespoon lemon juice
- 2 tablespoons all-purpose flour
- Pinch of salt
Optional topping
- Fresh raspberries
- Whipped cream
- Powdered sugar
- Mint leaves
- Extra raspberry sauce
1. Make the Raspberry Sauce
Place the raspberries, sugar, and lemon juice in a small saucepan.
Cook over medium heat for 5–7 minutes, stirring occasionally.
The berries will break down and become saucy.
Mix the cornstarch and water in a small bowl until smooth.
Add the slurry to the raspberries.
Cook for another 1–2 minutes, stirring constantly, until slightly thickened.
Remove from the heat.
For an ultra-smooth swirl, press the sauce through a fine-mesh strainer to remove the seeds.
Let it cool completely.
2. Prepare the Crust
Preheat the oven to 350°F (175°C).
Lightly grease a 9-inch springform pan.
Combine the graham cracker crumbs, sugar, melted butter, and salt.
Mix until the crumbs resemble wet sand.
Pour into the pan.
Press firmly across the bottom and slightly up the sides.
Use the bottom of a glass or measuring cup to make the crust compact and even.
Bake for 8–10 minutes.
Remove and allow it to cool.
Reduce the oven temperature to 325°F (165°C).
3. Make the Cheesecake Filling
Place the softened cream cheese in a large bowl.
Beat on low to medium speed until smooth.
Add the sugar and mix until incorporated.
Add the sour cream, vanilla, lemon juice, flour, and salt.
Mix just until smooth.
Important:
Don’t whip the mixture excessively.
Too much air can cause the cheesecake to puff during baking and crack as it cools.
4. Add the Eggs
Add the eggs one at a time.
Mix on low speed after each addition until just incorporated.
Scrape the sides and bottom of the bowl with a spatula.
The finished batter should be silky and smooth.
5. Assemble the Cheesecake
Pour about half of the cheesecake batter over the cooled crust.
Spoon several small dollops of raspberry sauce over the surface.
Add the remaining cheesecake batter.
Spoon more raspberry sauce on top in small pools.
You don’t need to use all of the sauce.
6. Create the Swirl
Take a thin knife or wooden skewer.
Gently drag it through the raspberry sauce in small figure-eight or swirling motions.
Don’t swirl too deeply.
You want ribbons of raspberry throughout the cheesecake rather than mixing the sauce completely into the batter.
7. Bake
Place the cheesecake in the center of the oven.
Bake at 325°F (165°C) for approximately 60–70 minutes.
The edges should look set while the center still has a slight jiggle when you gently move the pan.
Don’t wait until the center is completely firm.
It will continue cooking as it cools.
8. Cool Gradually
Turn off the oven.
Crack the oven door open slightly.
Leave the cheesecake inside for approximately 30–60 minutes.
Remove it from the oven.
Run a thin knife around the edge to loosen the cheesecake from the sides of the pan.
Don’t remove the springform ring yet.
Allow it to cool completely at room temperature.
9. Refrigerate
Cover the cheesecake and refrigerate for at least 6 hours.
For the best texture, refrigerate overnight.
The cheesecake will become firmer, creamier, and much easier to slice.
10. Decorate
Remove the springform ring.
Top with:
- Fresh raspberries
- Whipped cream
- Raspberry sauce
- A light dusting of powdered sugar
For a dramatic presentation, drizzle raspberry sauce over individual slices.
How to Get Perfect Raspberry Swirls
The secret is to use thick, cooled raspberry sauce.
If the sauce is hot or watery, it will sink into the cheesecake.
Make small dollops rather than large pools.
Then use a thin knife to make only a few deliberate swirls.
Over-swirling will muddy the beautiful red-and-white pattern.
Chocolate Raspberry Cheesecake
Add ½ cup melted and cooled dark chocolate to half of the cheesecake batter.
Layer the chocolate and vanilla cheesecake batter with the raspberry sauce.
The combination of dark chocolate and tart raspberry is excellent.
White Chocolate Raspberry Cheesecake
Melt 6 oz (170 g) white chocolate.
Allow it to cool slightly.
Beat it into the cream cheese mixture before adding the eggs.
Use the raspberry sauce for the swirl.
This creates an especially rich, creamy cheesecake.
Lemon Raspberry Cheesecake
Add 1 tablespoon finely grated lemon zest to the filling.
Increase the lemon juice to 2 tablespoons.
The bright citrus flavor balances the richness of the cheesecake beautifully.
