Ingredients
Chicken Salad
- 3 cups cooked chicken, shredded or diced
- ½ cup celery, finely diced
- ½ cup red or green grapes, halved

- ⅓ cup chopped pecans or walnuts
- 2 tablespoons fresh parsley, chopped
- 1–2 tablespoons fresh dill, optional
Creamy Dressing
- ½ cup mayonnaise
- ¼ cup plain Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 teaspoon honey
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
1. Prepare the chicken
You can use leftover roasted chicken, rotisserie chicken, or freshly cooked chicken breasts.
For homemade poached chicken:
- Place chicken breasts in a saucepan.
- Cover with water or chicken broth.
- Add a pinch of salt.
- Bring to a gentle simmer.
- Cook for approximately 12–15 minutes, depending on thickness, until the chicken reaches 165°F (74°C) internally.
- Remove and cool completely.
- Dice or shred.
Don’t overcook the chicken or the salad can become dry.
2. Prepare the vegetables and fruit
Dice the celery and red onion.
Cut the grapes in half.
Chop the pecans or walnuts.
Add everything to a large mixing bowl.
3. Make the dressing
In a separate bowl, whisk together:
- Mayonnaise
- Greek yogurt
- Dijon mustard
- Lemon juice
- Honey
- Garlic powder
- Onion powder
- Salt
- Black pepper
Taste and adjust the seasoning.
