Prep time: 20 minutes
Chill time: 20–30 minutes
Total time: About 45 minutes
Ingredients
Salad
- 4 cups finely shredded green cabbage
- 2 cups finely shredded purple cabbage
- 1 large cucumber, thinly sliced
- 1 large carrot, julienned or grated
- ½ small red onion, very thinly sliced
- 3 green onions, sliced
- ¼ cup fresh parsley, chopped
- 2 tablespoons fresh cilantro, chopped, optional
- 2 tablespoons toasted sesame seeds
- ¼ cup chopped peanuts or cashews, optional
Creamy-Tangy Dressing
- ⅓ cup mayonnaise
- 2 tablespoons Greek yogurt
- 2 tablespoons rice vinegar
- 1 tablespoon fresh lemon juice
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 teaspoon toasted sesame oil
- 1 small garlic clove, finely grated
- ½ teaspoon salt
- ¼ teaspoon black pepper
1. Prepare the cabbage
Remove any tough outer cabbage leaves.
Finely shred both the green and purple cabbage.
Place them in a large bowl.
For extra-crisp cabbage, place the shredded cabbage in ice-cold water for 5–10 minutes, then drain extremely well.
Pat it dry before continuing.
2. Prepare the vegetables
Thinly slice the cucumber.
Julienne or grate the carrot.
Thinly slice the red onion.
Slice the green onions.
Chop the parsley and cilantro.
Add everything to the cabbage.
3. Toast the sesame seeds
Place the sesame seeds in a dry skillet over medium-low heat.
Toast for approximately 2–3 minutes, stirring frequently.
Remove as soon as they become lightly golden and fragrant.
Let them cool.
4. Make the dressing
Whisk together:
- Mayonnaise
- Greek yogurt
- Rice vinegar
- Lemon juice
- Honey
- Dijon mustard
- Sesame oil
- Garlic
- Salt
- Black pepper
Whisk until completely smooth.
Taste and adjust.
For a tangier salad, add another teaspoon of vinegar.
For more sweetness, add a little extra honey.
5. Combine
Pour the dressing over the vegetables.
Toss thoroughly until everything is lightly coated.
Don’t drown the vegetables in dressing—the cabbage should remain crisp.
6. Chill
Refrigerate for 20–30 minutes before serving.
This gives the flavors time to blend while keeping the vegetables crunchy.
Add the toasted sesame seeds and chopped nuts immediately before serving.
Extra-Crunchy Asian-Style Version
For a lighter, sharper dressing, use:
- 3 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1 garlic clove, grated
- 1 teaspoon lime juice
Skip the mayonnaise and Greek yogurt.
Add chopped peanuts and sesame seeds.
Spicy Version
Add to the dressing:
- 1 teaspoon sriracha
- ½ teaspoon red pepper flakes
- 1 finely sliced jalapeño
For extra heat, add a little chili oil.
Creamy Ranch Cabbage & Cucumber Salad
Replace the Asian-style seasonings with:
- ½ cup Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon dried dill
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and pepper
Add chopped fresh dill and parsley to the salad.
Add Protein
Turn it into a complete light meal by adding:
- Shredded rotisserie chicken
- Grilled chicken
- Flaked tuna
- Chopped boiled eggs
- Cooked shrimp
- Crispy chickpeas
- Edamame
For a heartier version, serve it over cooked quinoa.
Make It More Filling
Add:
- ½ avocado
- ¼ cup sunflower seeds
- ¼ cup pumpkin seeds
- ¼ cup roasted peanuts
- ½ cup chickpeas
The seeds and nuts add crunch as well as healthy fats.
How to Keep It Crunchy
The most important tricks are:
- Dry the vegetables thoroughly after washing.
- Don’t add the dressing too far in advance.
- Use thinly sliced but not paper-thin cucumber.
- Add nuts and seeds immediately before serving.
- If preparing ahead, keep the dressing separate.
For maximum crunch, prepare the vegetables up to 24 hours ahead, refrigerate them separately, and toss with dressing just before eating.
Storage
Undressed vegetables can be refrigerated for 2–3 days in an airtight container.
Once dressed, the salad is best eaten within 24 hours, because the cabbage and cucumber gradually release water and become softer.
Best flavor combination
For a particularly delicious version, use green cabbage + purple cabbage + cucumber + carrot + green onion + cilantro + sesame seeds + peanuts, then toss with the sesame-garlic dressing just before serving. The combination of sweet, tangy, creamy, nutty, and crunchy flavors makes this salad hard to stop eating.
