Blueberry Greek Yogurt Bites
Creamy, fruity, and refreshing little frozen bites made with Greek yogurt and blueberries. They’re an easy high-protein snack or naturally sweet treat that you can keep in the freezer for whenever you want something cold and satisfying.Makes: 20–24 bites
Prep time: 10 minutes
Freeze time: 2–3 hours
Total time: About 3 hours
Ingredients
- 1 cup (240 g) plain Greek yogurt
- 1 cup fresh blueberries
- 2 tablespoons honey or maple syrup
- ½ teaspoon vanilla extract
- 1 tablespoon lemon juice
- 2 tablespoons finely chopped almonds, optional
- 2 tablespoons unsweetened shredded coconut, optional
Instructions
1. Prepare the blueberries
Wash the blueberries and pat them completely dry.
Set aside a few whole blueberries for topping.
2. Make the yogurt mixture
Add the Greek yogurt, honey, vanilla, and lemon juice to a bowl.
Stir until smooth and creamy.
Taste and add another teaspoon of honey if you prefer a sweeter bite.
3. Add the blueberries
Gently fold the blueberries into the yogurt mixture.
For a stronger blueberry flavor, lightly crush about one-third of the berries with a fork before folding them in.
This creates pretty purple streaks throughout the yogurt.
4. Prepare the tray
Line a baking sheet or flat freezer-safe tray with parchment paper.
Spoon the mixture into small mounds, approximately 1 tablespoon each.
You can also use a silicone mini-muffin mold for evenly shaped bites.
5. Add toppings
Top each bite with:
- A blueberry
- Chopped almonds
- Shredded coconut
Press the toppings gently into the yogurt so they stay attached after freezing.
6. Freeze
Place the tray in the freezer.
Freeze for 2–3 hours, or until completely firm.
For the best texture, allow them to sit at room temperature for 2–5 minutes before eating.
Creamier Blueberry Cheesecake Bites
For a richer dessert-like version, mix:
- ¾ cup Greek yogurt
- 4 oz softened cream cheese
- 2 tablespoons honey
- ½ teaspoon vanilla
- 1 cup blueberries
Fold everything together and freeze as directed.
Add a sprinkle of crushed graham crackers on top for a cheesecake flavor.
Chocolate Blueberry Bites
Add 1 tablespoon unsweetened cocoa powder to the yogurt mixture.
You can also drizzle the frozen bites with melted dark chocolate.
Return them to the freezer for about 10 minutes to set the chocolate.
Blueberry Lemon Bites
Increase the lemon juice to 1½ tablespoons.
Add 1 teaspoon finely grated lemon zest.
The bright lemon flavor works beautifully with the blueberries.
Higher-Protein Version
Use a thick, high-protein Greek yogurt.
You can also mix in ½ scoop vanilla protein powder.
If the mixture becomes too thick, add a tablespoon of milk.
Storage
Once frozen, transfer the bites to an airtight freezer container or freezer bag.
Separate layers with parchment paper.
Store for up to 1 month for the best flavor and texture.
They will soften fairly quickly after being removed from the freezer, so keep them frozen until you’re ready to eat them.
Best tip
Use thick Greek yogurt and make sure the blueberries are completely dry. Too much moisture makes the bites icy instead of creamy. For the prettiest result, lightly crush a few blueberries and leave the rest whole for a beautiful blueberry swirl.
