🍍 Pineapple Coconut Dream Cake

Ingredients
Cake
- 2 cups all-purpose flour
- 1½ cups granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ teaspoon coconut extract, optional
- 1 cup buttermilk
- 1 cup crushed pineapple, well drained
- ½ cup sweetened shredded coconut
Pineapple-Coconut Filling
- 1 can (20 oz) crushed pineapple, undrained
- ½ cup granulated sugar
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1 tablespoon butter
- ½ teaspoon vanilla extract
Creamy Coconut Topping
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- ½ teaspoon coconut extract, optional
- 1½ cups heavy whipping cream, cold
- ½ cup sweetened shredded coconut
Garnish
- ½ cup toasted coconut
- Pineapple pieces
- Maraschino cherries, optional
- White chocolate curls, optional
1. Prepare the oven
Preheat your oven to 350°F (175°C).
Grease a 9 × 13-inch baking pan.
For easier serving, line the bottom with parchment paper.
2. Mix the dry ingredients
In a medium bowl, whisk together:
- Flour
- Baking powder
- Baking soda
- Salt
Set aside.
3. Cream the butter and sugar
In a large mixing bowl, beat the softened butter and sugar for 2–3 minutes.
The mixture should become lighter and fluffy.
Add the eggs one at a time, beating well after each addition.
Add vanilla and coconut extract if using.
4. Add the dry ingredients
Add the flour mixture in three additions, alternating with the buttermilk.
Begin and end with the dry ingredients.

5. Add pineapple and coconut
Gently fold in the drained crushed pineapple and shredded coconut.
The batter should be thick and evenly combined.
6. Bake
Spread the batter evenly in the prepared pan.
Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Don’t overbake.
Allow the cake to cool completely.
Make the Pineapple Filling
7. Combine the ingredients
Place the crushed pineapple, sugar, and cornstarch in a saucepan.
Mix the water with the cornstarch first if you prefer a smoother filling.
8. Cook
Cook over medium heat, stirring constantly.
Once the mixture begins to bubble, continue cooking for approximately 2–3 minutes until thickened.
Remove from the heat.
Stir in the butter and vanilla.
Allow the filling to cool completely.
Make the Coconut Cream
9. Beat the cream cheese
Beat the softened cream cheese until smooth.
Add the powdered sugar, vanilla, and coconut extract.
Beat until creamy.
10. Whip the cream
In a separate chilled bowl, whip the cold heavy cream until stiff peaks form.
Don’t overbeat.
11. Combine
Gently fold the whipped cream into the cream cheese mixture.
Fold in the shredded coconut.
You should have a thick, fluffy coconut cream.
Assemble the Cake
12. Layer the cake
Once the cake is completely cool, spread the pineapple filling evenly over the top.
Spoon the coconut cream over the pineapple layer.
Spread gently with a spatula.
13. Add the topping
Sprinkle toasted coconut over the entire surface.
Decorate with small pineapple pieces and cherries if desired.
14. Chill
Cover the cake and refrigerate for at least 4 hours.
For the best flavor and texture, refrigerate it overnight.

Toasted Coconut
For extra flavor, spread the shredded coconut on a baking sheet.
Toast at 350°F (175°C) for approximately 5–8 minutes, stirring once or twice.
Watch it carefully because coconut can burn quickly.

Extra-Tropical Version
Add:
- ½ cup chopped macadamia nuts
- ½ cup finely diced mango
- 1 teaspoon lime zest
Scatter the macadamia nuts over the cream layer before adding the toasted coconut.
Pina Colada Dream Cake
For a stronger pina-colada flavor, add:
- ½ cup sweetened coconut
- ½ cup chopped pineapple
- ½ teaspoon coconut extract
- ½ teaspoon rum extract, optional
You can also brush the cooled cake with a few tablespoons of pineapple juice before adding the filling.
Easy Shortcut Version
If you want to make this much faster, use:
- 1 boxed yellow or white cake mix
- 1 can crushed pineapple
- 1 cup shredded coconut
- Prepared whipped topping
- 8 oz softened cream cheese
- Powdered sugar
- Toasted coconut
Bake the cake according to the package directions, cool completely, and assemble with the pineapple and coconut cream.
It won’t be quite as homemade, but it’s an excellent shortcut.
Storage
Keep the cake covered and refrigerated.
It will stay fresh for approximately 3–4 days.
Because of the cream cheese and whipped cream topping, don’t leave it at room temperature for extended periods.
Freezing
For best results, freeze the cake portion without the cream topping.
Wrap tightly and freeze for up to 2 months.
Thaw in the refrigerator, then add the pineapple filling and coconut cream.
Best tip
Make it a day ahead. The overnight chilling time allows the pineapple juices to soak into the cake while the coconut cream firms up. The result is an exceptionally moist, creamy, tropical dessert with a soft cake layer, bright pineapple center, and fluffy coconut topping.
