Freshly Baked Chocolate Cookies

Ingredients
- 1 cup (225 g) unsalted butter, softened
- ¾ cup (150 g) granulated sugar
- ¾ cup (165 g) packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1¾ cups (220 g) all-purpose flour
- ½ cup (45 g) unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup (170 g) semi-sweet chocolate chips
- ½ cup (85 g) milk chocolate chips
- ½ cup chopped walnuts or pecans, optional
- Flaky sea salt, optional
1. Prepare the oven
Preheat the oven to 350°F (175°C).
Line two baking sheets with parchment paper.
2. Cream the butter and sugars
Place the softened butter, granulated sugar, and brown sugar in a large bowl.
Beat for 2–3 minutes, until light and fluffy.
This helps give the cookies their soft, chewy texture.
3. Add the eggs and vanilla
Beat in the eggs one at a time.
Add the vanilla.
Mix until smooth.
Scrape down the sides of the bowl as needed.
4. Mix the dry ingredients
In a separate bowl, whisk together:
- Flour
- Cocoa powder
- Baking soda
- Salt
Whisk thoroughly so the baking soda is evenly distributed.
5. Make the cookie dough
Gradually add the dry ingredients to the butter mixture.
Mix on low speed or stir by hand until just combined.
Don’t overmix.
Fold in the semi-sweet chocolate chips, milk chocolate chips, and nuts if using.
The dough should be thick and soft.
6. Chill the dough
Cover the bowl and refrigerate for 30 minutes.

For an even richer flavor, you can refrigerate the dough for several hours.
7. Shape the cookies
Scoop approximately 2 tablespoons of dough for each cookie.
Roll gently into balls.
Place them on the prepared baking sheets about 2 inches apart.
Press a few extra chocolate chips into the tops.
8. Bake
Bake for 9–11 minutes.
The edges should look set while the centers still look slightly soft.
Don’t wait for the centers to look completely baked.
They’ll continue cooking on the hot baking sheet.
9. Add flaky salt
If desired, sprinkle the cookies with a tiny amount of flaky sea salt immediately after removing them from the oven.
The salt balances the rich chocolate flavor beautifully.
10. Let them rest
Allow the cookies to remain on the baking sheet for 5 minutes.
Then transfer them to a wire rack.

Extra-Fudgy Chocolate Cookies
For an even richer, brownie-like cookie:
- Increase cocoa powder to ⅔ cup.
- Reduce flour to 1½ cups.

Chill the dough for at least 45 minutes before baking.
Triple Chocolate Cookies
Use:
- ½ cup cocoa powder
- 1 cup semi-sweet chocolate chips
- ½ cup milk chocolate chips
- ½ cup white chocolate chips
The combination creates pockets of dark, creamy, and sweet chocolate throughout each cookie.
Double Chocolate Orange Cookies
Add:
- 1 tablespoon finely grated orange zest
- ½ teaspoon orange extract
Use dark chocolate chips instead of milk chocolate.

Peanut Butter Chocolate Cookies
Add ½ cup creamy peanut butter to the butter mixture.
Reduce the butter to ¾ cup (170 g).

How to Keep Them Soft
The most important trick is don’t overbake them.
Take them out when the edges are set but the centers still look slightly underdone.

- Use brown sugar for moisture.

Storage
Store completely cooled cookies in an airtight container at room temperature for 4–5 days.

Freezing
You can freeze either baked cookies or unbaked dough.
For dough:
- Scoop the dough into individual balls.
- Freeze on a tray until solid.
- Transfer to a freezer-safe bag.
