Creamy, rich little bites with the flavor of strawberry cheesecake. They’re made with cream cheese, butter, fresh strawberries, and vanilla, then chilled until firm. Perfect for a quick low-carb treat.Makes: 18–20 bites

Ingredients
Strawberry cheesecake mixture
- 8 oz (225 g) full-fat cream cheese, softened
- 4 tablespoons unsalted butter, softened
- ½ cup (75 g) fresh strawberries, finely chopped
- 2–3 tablespoons powdered erythritol or another powdered sweetener, to taste
- 1 teaspoon vanilla extract
- 1 teaspoon fresh lemon juice
- ½ teaspoon lemon zest
- Pinch of salt
Optional coating
- ½ cup freeze-dried strawberries, crushed
- ¼ cup unsweetened shredded coconut
- ¼ cup finely chopped pecans
- 2 tablespoons powdered sweetener
1. Prepare the strawberries
Wash and thoroughly dry the strawberries.
Remove the stems.
Finely dice the berries.
Place them on a paper towel and gently pat them dry.
This step is important because excess moisture can make the fat bombs too soft.
For an even firmer result, spread the diced strawberries on a plate and refrigerate them for 15–20 minutes.
2. Make the cheesecake base
Place the softened cream cheese and butter in a mixing bowl.
Beat with an electric mixer for 2–3 minutes, until completely smooth and fluffy.
Add:
- Powdered sweetener
- Vanilla
- Lemon juice
- Lemon zest
- Salt
Beat again until well combined.
Taste the mixture and adjust the sweetness.
3. Add the strawberries
Gently fold the finely chopped strawberries into the cheesecake mixture.
Don’t overmix.
You want little pieces of strawberry throughout the creamy filling.
If the mixture feels too soft, refrigerate it for 20–30 minutes.
4. Form the fat bombs
Line a baking sheet or plate with parchment paper.
Use a small cookie scoop or tablespoon to portion the mixture.
Roll each portion gently between your palms to form a ball.
You should get approximately 18–20 bites.
If the mixture sticks to your hands, chill it for another 15 minutes.
5. Add a coating
For a classic strawberry cheesecake look, roll each ball in crushed freeze-dried strawberries.
Alternatively, combine the freeze-dried strawberries with coconut and roll the balls in the mixture.
For a nutty version, coat them with finely chopped pecans.
6. Chill
Place the finished bites in the refrigerator for at least 2 hours.
They should become firm but remain creamy inside.
For a firmer texture, freeze them for about 30–45 minutes before serving.
White Chocolate Strawberry Cheesecake Bites
For a more decadent version, melt ½ cup sugar-free white chocolate.
Dip the chilled bites into the chocolate.
Place them back on parchment.
Sprinkle immediately with crushed freeze-dried strawberries.
Refrigerate until the coating is firm.
Chocolate Strawberry Version
Add 1 tablespoon unsweetened cocoa powder to the cream cheese mixture.
Use a sugar-free dark chocolate coating.
The chocolate-and-strawberry combination makes these taste like miniature chocolate-covered cheesecake bites.
Strawberry Coconut Version
Add ¼ cup unsweetened shredded coconut directly to the filling.
Roll the finished bites in additional coconut.
For extra flavor, lightly toast the coconut first and let it cool completely.
Lemon Strawberry Cheesecake
Increase the lemon zest to 1½ teaspoons.
Add another teaspoon of lemon juice.
The extra citrus makes the strawberry flavor brighter and gives the bites a classic cheesecake taste.
Higher-Protein Version
Traditional fat bombs are designed to be high in fat rather than high in protein. If you’d like a more protein-focused version, replace 2 tablespoons of the butter with ¼ cup thick Greek yogurt.
The texture will be softer and less rich, but you’ll get more protein per bite.
Storage
Store the bites in an airtight container in the refrigerator for up to 5 days.
Place parchment between layers if stacking them.
For longer storage, freeze them for up to 2 months.
Let frozen bites sit at room temperature for 5–10 minutes before eating.
Important Tip
Fresh strawberries contain quite a bit of water. Drying the berries thoroughly and chopping them very finely is the key to keeping these bites firm and creamy rather than watery.
For the best texture, use full-fat cream cheese and real butter, and make sure both are softened before mixing.
