3-Ingredient Depression-Era Breakfast

This old-fashioned breakfast is simple, filling, and made with just three inexpensive ingredients. Recipes like this were popular during the Great Depression because families often had to make satisfying meals from whatever affordable staples were available.

Ingredients

  • 2 large potatoes
  • 1 small onion
  • 2 tablespoons butter or bacon fat

Instructions

  1. Prepare the potatoes
    Peel the potatoes if desired, then cut them into small, evenly sized cubes. Rinse briefly and pat them dry.
  2. Cook the potatoes
    Heat the butter or bacon fat in a large skillet over medium heat. Add the potatoes and spread them into an even layer.

    Cook for about 10–15 minutes, turning occasionally, until they begin to become golden and tender.

  3. Add the onion
    Dice the onion and add it to the skillet. Continue cooking for another 8–10 minutes, stirring occasionally, until the potatoes are crispy on the outside and the onion is soft and lightly browned.
  4. Serve hot
    Remove from the heat and serve immediately.

Optional Seasoning

Salt and black pepper can be added if you have them available. Although they aren’t necessary for the three-ingredient base, they make the dish more flavorful.

For a more substantial breakfast, you can serve the potatoes with eggs, but the basic recipe remains just potatoes, onion, and fat.
