Weetabix Blueberry Overnight
A creamy, high-fiber overnight breakfast made with Weetabix, blueberries, yogurt, and a naturally sweet berry layer. It takes just a few minutes to prepare and becomes soft, cheesecake-like, and delicious after chilling overnight.Servings: 1 large or 2 small

Ingredients
Weetabix base
- 2 Weetabix biscuits
- ½ cup (120 ml) milk
- ½ teaspoon vanilla extract
- 1 teaspoon honey or maple syrup
- ¼ teaspoon cinnamon
- Pinch of salt
Creamy yogurt layer
- ¾ cup (170 g) Greek yogurt
- 1 tablespoon honey or maple syrup
- ½ teaspoon vanilla extract
- 1 tablespoon chia seeds, optional
Blueberry layer
- ¾ cup (110 g) fresh or frozen blueberries
- 1 teaspoon lemon juice
- 1 teaspoon honey or maple syrup
- 1 teaspoon chia seeds
Topping
- Fresh blueberries
- 1 tablespoon sliced almonds
- 1 tablespoon coconut flakes
- 1 teaspoon peanut or almond butter
- Optional: a little honey
1. Make the blueberry layer
Add the blueberries, lemon juice, and honey to a small saucepan.
Cook over medium-low heat for 4–6 minutes, stirring occasionally.
As the berries soften, gently crush some of them with the back of a spoon.
You don’t want a completely smooth sauce. Keeping some whole berries gives the breakfast a much nicer texture.
Remove from the heat and stir in the chia seeds.
Let the mixture cool for several minutes.
If you’re using frozen blueberries, you can add them directly to the pan without thawing.
2. Prepare the Weetabix base
Break the two Weetabix biscuits into a bowl or jar.
Pour in the milk.
Add vanilla, honey, cinnamon, and a tiny pinch of salt.
Mash everything together with a fork until you have a thick, porridge-like mixture.
Don’t worry if there are a few small pieces of Weetabix remaining.
They’ll soften completely overnight.
If the mixture seems extremely thick, add another tablespoon or two of milk.
3. Make the yogurt layer
In a separate bowl, combine the Greek yogurt, honey, and vanilla.
Stir until smooth.
For a thicker, more cheesecake-like texture, mix in the chia seeds.
Taste and adjust the sweetness.
4. Assemble
Use a jar, glass, or small container.
Start with the Weetabix mixture.
Press it gently into an even layer.
Add the creamy yogurt mixture.
Spread it evenly across the surface.
Spoon the cooled blueberry mixture over the yogurt.
You can leave it as a separate layer or gently swirl it through the yogurt.
For a beautiful marble effect, use the tip of a knife to make a few gentle swirls.
5. Refrigerate
Cover the container tightly.
Refrigerate for at least 6 hours, preferably overnight.
During this time, the Weetabix absorbs the milk and becomes soft and creamy, while the chia seeds thicken the blueberry layer.
6. Add the toppings
In the morning, remove the container from the refrigerator.
Top with fresh blueberries, sliced almonds, and coconut flakes.
Drizzle with almond or peanut butter.
For extra sweetness, finish with a tiny drizzle of honey.
For a cheesecake-style version
If you want the overnight Weetabix to taste more like a blueberry cheesecake, make these changes:
- Use ¾ cup thick Greek yogurt
- Add 2 tablespoons light cream cheese to the yogurt layer
- Add ½ teaspoon extra vanilla
- Add 1 teaspoon lemon zest
- Use crushed digestive biscuits as a topping
- Add a little extra blueberry compote
The result is much richer and creamier.
Quick no-cook version
If you don’t want to make the blueberry compote, simply mash ½ cup blueberries with a fork.
Mix with 1 teaspoon honey and 1 teaspoon chia seeds.
Let it sit for about 5 minutes, then spoon it over the yogurt.
This saves several minutes and still gives you plenty of blueberry flavor.
Chocolate blueberry version
For a chocolate-and-blueberry combination, add:
- 1 tablespoon unsweetened cocoa powder to the Weetabix layer
- 1 teaspoon maple syrup
- A few dark chocolate chips
Top with blueberries and almond butter.
The slightly bitter chocolate works beautifully with the sweet-tart blueberry layer.
Lemon blueberry version
Add 1 teaspoon finely grated lemon zest to the yogurt layer and another teaspoon of lemon juice to the blueberry compote.
This makes the whole breakfast taste brighter and fresher.
Storage
Keep refrigerated in a sealed container.
It’s best eaten within 2–3 days.
Add crunchy toppings such as almonds or coconut immediately before eating so they don’t become soft overnight.
Best texture tip
For the creamiest result, prepare it the night before and use thick Greek yogurt plus just enough milk to soften the Weetabix.
If you prefer a softer, more pudding-like consistency, add another 2–3 tablespoons of milk before refrigerating.
If you prefer it very thick and spoonable, reduce the milk slightly and add the optional chia seeds.
