Instructions
Preheat the oven to 190°C (375°F). Melt the butter in a frying pan and cook the onion and celery for 5–7 minutes until softened. Allow to cool slightly.
In a large bowl, combine the ground turkey, bread cubes, cooked vegetables, egg, sage, thyme, rosemary, salt, pepper and parsley. Gradually add stock until the mixture holds together without becoming soggy.
Roll the mixture into 12–16 balls, roughly the size of a golf ball. Arrange them on a lightly greased or parchment-lined baking tray.
Bake for 25–30 minutes, turning halfway if desired. Because these contain ground turkey, check that the centre reaches 74°C (165°F) with a food thermometer.

Easy variation
For turkey stuffing balls without ground turkey, simply leave out the minced meat and add a little extra bread stuffing and stock as needed. Shape and bake until golden, checking that the centre is hot throughout.
