Southern Butter Biscuit Bites

These tender, buttery biscuit bites are golden on the outside, soft and fluffy inside, and brushed with melted butter while they’re still warm.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, cubed
  • ¾ cup cold buttermilk
  • 2 tablespoons melted butter, for brushing

Instructions

1. Prepare the Oven

Preheat your oven to 425°F (220°C). Lightly grease a baking sheet or line it with parchment paper.

2. Make the Dough

In a large bowl, whisk together the flour, baking powder, sugar, and salt.

Add the cold cubed butter and cut it into the flour using a pastry cutter or your fingertips until the mixture resembles coarse crumbs. Leave a few small pieces of butter intact for extra-flaky biscuits.

Pour in the cold buttermilk and gently stir just until a soft dough forms. Do not overmix.

3. Shape the Bites

Transfer the dough to a lightly floured surface. Gently pat it to about ¾-inch thickness.

Cut into small rounds or squares. Place the biscuit bites close together on the prepared baking sheet.

4. Bake

Bake for 10–13 minutes, or until the biscuit bites are puffed and lightly golden on top.

5. Brush With Butter

Remove them from the oven and immediately brush the tops generously with melted butter.

For an extra-buttery finish, brush them once more while they’re still warm.

Tips

  • Keep the butter and buttermilk cold.
  • Handle the dough as little as possible.
  • Don’t add too much flour when shaping.
  • Placing the biscuits close together keeps their sides soft.
  • Serve warm for the best flavor and texture.
