A luxurious, cloud-light dessert made with silky whipped cream, tangy cream cheese, and ribbons of homemade salted caramel. The caramel is folded through just enough to create a beautiful marbled effect rather than turning the whole dessert into one uniform color.Yield: 6–8 servings

Ingredients

For the salted caramel sauce

  • 1 cup (200 g) granulated sugar
  • ¼ cup (60 ml) water
  • 4 tbsp (56 g) unsalted butter, cut into pieces
  • ½ cup (120 ml) heavy cream, warmed
  • ¾ tsp fine sea salt
  • 1 tsp vanilla extract

For the biscuit base

  • 1½ cups (150 g) digestive biscuits or graham crackers, finely crushed
  • 5 tbsp (70 g) unsalted butter, melted
  • 1 tbsp brown sugar
  • Pinch of salt

For the caramel whip

  • 8 oz (225 g) full-fat cream cheese, softened
  • ½ cup (120 g) salted caramel sauce, cooled
  • ⅓ cup (40 g) powdered sugar
  • 1 tsp vanilla extract
  • 1½ cups (360 ml) cold heavy whipping cream
  • 2 tbsp powdered sugar
  • ¼ tsp fine sea salt

For the marble swirl

  • ⅓–½ cup (80–120 g) additional salted caramel sauce
  • Flaky sea salt, for finishing
  • Optional: chopped toasted pecans or walnuts

1. Make the salted caramel

Place the sugar and water in a medium, heavy-bottomed saucepan.

Heat over medium heat, stirring only until the sugar has dissolved. Once it begins to boil, stop stirring. Let it cook until the syrup becomes a deep golden-amber color.

This usually takes around 7–10 minutes, but watch it closely because caramel can go from perfect to burnt very quickly.

Remove the saucepan from the heat.

Carefully add the butter a few pieces at a time. The mixture will bubble vigorously, so keep your hands and face away from the pan.

Slowly pour in the warm heavy cream while whisking continuously. The caramel will foam dramatically.

Return the pan to low heat and whisk until completely smooth.

Add the salt and vanilla.

Allow the caramel to cool until it is thick but still pourable. You need it cool enough that it won’t melt the whipped cream later.

Important: Never pour hot caramel directly into the cream mixture.

2. Prepare the biscuit base

Place the digestive biscuits or graham crackers in a food processor and pulse until finely crushed.

Mix the crumbs with the melted butter, brown sugar, and pinch of salt.

The mixture should resemble damp sand and hold together when squeezed.

Divide it between 6–8 glasses or press it into the bottom of a small serving dish.

Gently compact the crumbs with the back of a spoon.

Refrigerate while you prepare the filling.

3. Make the caramel cream mixture

Place the softened cream cheese in a large bowl.

Beat it until completely smooth and creamy, about 1–2 minutes.

Add:

  • ½ cup cooled salted caramel
  • ⅓ cup powdered sugar
  • Vanilla
  • ¼ tsp sea salt

Beat again until smooth.

Scrape down the sides of the bowl so there are no pockets of plain cream cheese.

4. Whip the cream

Pour the cold heavy cream into a separate chilled bowl.

Add the 2 tablespoons of powdered sugar.

Beat on medium-high speed until the cream reaches medium-stiff peaks.

Don’t overwhip it. The cream should be thick enough to hold its shape but still look smooth and silky.

5. Combine the whip

Add about one-third of the whipped cream to the caramel cream cheese mixture.

Gently fold it in to lighten the mixture.

Add the remaining whipped cream in two additions, folding carefully after each addition.

Use a large spatula and gentle movements. You want to preserve as much air as possible.

The finished mixture should be fluffy, smooth, and mousse-like.

6. Create the caramel marble

This is the most important step for the appearance of the dessert.

Spoon a layer of caramel whip into each serving glass.

Drizzle a small amount of salted caramel over it.

Add another layer of caramel whip.

Drizzle with more caramel.

Continue until the glasses are filled.

For a stronger marble effect, insert a thin skewer, toothpick, or small knife into the mixture and make 2–3 gentle figure-eight movements.

Don’t stir repeatedly.

The goal is to create ribbons of caramel throughout the cream rather than completely mixing the caramel in.

7. Chill

Cover the glasses and refrigerate for at least 3 hours.

For the best texture, you can refrigerate them overnight.

As they chill, the cream cheese and whipped cream will firm up, giving you a soft, spoonable mousse.

8. Decorate

Just before serving, drizzle each portion with additional salted caramel.

Sprinkle with a tiny amount of flaky sea salt.

For extra texture, add:

  • Toasted pecans
  • Toasted walnuts
  • Crushed caramel biscuits
  • Chocolate shavings
  • Small pieces of homemade caramel

A final drizzle of warm-but-not-hot caramel makes the dessert especially attractive.

Tips for the perfect marble effect

Don’t overmix the caramel. If you completely stir it into the filling, you’ll get caramel-colored cream rather than a marble effect.

Use cooled caramel. Warm caramel can deflate the whipped cream and make the filling runny.

Use cold cream. Heavy cream whips much better when thoroughly chilled.

Soften the cream cheese first. Cold cream cheese can leave little lumps throughout the mousse.

Don’t overwhip the cream. If it becomes grainy or starts turning buttery, you’ve gone too far.

Make-ahead instructions

This dessert is excellent for entertaining because it can be prepared ahead of time.

Prepare the glasses, cover them tightly, and refrigerate for up to 24 hours before serving.

Keep the final caramel drizzle and flaky salt for just before serving.

The caramel sauce itself can be prepared several days ahead and stored in an airtight container in the refrigerator. If it becomes too firm, warm it gently until it becomes pourable again.

Easy variations

Chocolate Salted Caramel Marble Whip

Add 2 tablespoons unsweetened cocoa powder to the cream cheese mixture and increase the powdered sugar slightly to taste.

Coffee Caramel Marble Whip

Dissolve 1–2 teaspoons instant espresso powder in a teaspoon of hot water. Cool it, then mix it into the caramel cream cheese.

Caramel Pecan Marble Whip

Add a layer of finely chopped toasted pecans between the biscuit base and whipped filling. Finish with more pecans on top.

Apple Caramel Marble Whip

Add a thin layer of cinnamon-spiced cooked apples between the biscuit base and caramel whip for an apple-caramel cheesecake-style dessert.

Serving

Take the dessert out of the refrigerator for about 5–10 minutes before serving.

Serve with an extra drizzle of salted caramel and a tiny pinch of flaky sea salt. The contrast between the cold, creamy whip, buttery caramel, crunchy biscuit base, and little bursts of salt makes the dessert especially rich and satisfying.
