Ingredients
Salad
- 4 large cucumbers, thinly sliced
- ½ small red onion, very thinly sliced
- 2 tablespoons fresh dill, chopped
- 1 clove garlic, finely minced
- ½ teaspoon salt
Pickling dressing
- ½ cup white vinegar
- ¼ cup water
- 2 tablespoons granulated sugar
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- ½ teaspoon black pepper
- ¼ teaspoon salt
- ½ teaspoon celery seed, optional
- ¼ teaspoon red pepper flakes, optional
1. Prepare the cucumbers
Wash and thinly slice the cucumbers.
For extra-crisp results, use English cucumbers or small Persian cucumbers.
Place the cucumber slices in a colander and sprinkle with ½ teaspoon salt.
Let them sit for 10–15 minutes.
Gently pat them dry with paper towels.
This removes excess water and prevents the dressing from becoming diluted.
2. Prepare the onion
Thinly slice the red onion.
If you prefer a milder onion flavor, place the slices in cold water for 5 minutes, then drain well.
3. Make the pickling dressing
In a small bowl, whisk together:
- Vinegar
- Water
- Sugar
- Olive oil
- Dijon mustard
- Black pepper
- Salt
- Celery seed
- Red pepper flakes
Whisk until the sugar is mostly dissolved.
Add the minced garlic.
4. Combine everything
Place the cucumbers and red onion in a large bowl.
Add the chopped dill.
Pour the pickling dressing over everything.
Toss gently until the vegetables are evenly coated.
5. Chill
Cover and refrigerate for at least 1 hour.
For stronger pickled flavor, let it sit for 3–4 hours.
Give it a gentle toss once or twice while chilling.
6. Serve
Taste just before serving.
Add extra dill, black pepper, or a splash of vinegar if desired.
Serve chilled.
Extra-Crispy Pickled Cucumber Salad
For maximum crunch, don’t salt the cucumbers for too long.
Instead:
- Slice the cucumbers.
- Pat them completely dry.
- Keep them refrigerated until you’re ready to dress them.
- Add the dressing shortly before serving.
This gives you a fresher, crunchier salad.
Creamy Pickled Cucumber Salad
For a creamy version, whisk together:
- ½ cup Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1 tablespoon fresh dill
- Salt and pepper
Toss with the cucumbers and onions.
Spicy Pickled Cucumber Salad
Add:
- ½ teaspoon red pepper flakes
- 1 thinly sliced jalapeño
- ½ teaspoon chili crisp or chili oil
The heat works particularly well with the cool cucumber.
Garlic Dill Version
Increase the garlic to 2–3 cloves.
Add another tablespoon of fresh dill.
Use white wine vinegar instead of white vinegar for a slightly softer flavor.
Asian-Inspired Version
Replace the olive oil with 1 tablespoon toasted sesame oil.
Add:
- 1 tablespoon soy sauce
- 1 teaspoon grated ginger
- 1 teaspoon sesame seeds
- 1 teaspoon rice vinegar
- Thinly sliced green onions
For a little sweetness, add 1 teaspoon honey.
