Prep time: 20 minutes
Chilling time: 30 minutes
Bake time: 10–12 minutes per batch
Total time: About 1 hour 10 minutes
Ingredients
- 1 cup (225 g) unsalted butter, softened
- ¾ cup (150 g) brown sugar, packed
- ½ cup (100 g) granulated sugar
- 2 large eggs, room temperature
- 2 tsp vanilla extract
- 1½ cups (190 g) all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1½ tsp ground cinnamon
- ¼ tsp ground nutmeg (optional)
- 3 cups (240 g) old-fashioned rolled oats
- 1 cup (150 g) raisins
- ½ cup (60 g) chopped walnuts or pecans (optional)
Instructions
1. Prepare the raisins
For especially soft, plump raisins, place them in a bowl and cover them with hot water.
Let them sit for about 10 minutes.
Drain them very well and pat dry with paper towels.
This little step keeps the raisins juicy instead of dry and chewy.
2. Prepare the oven
Preheat your oven to 350°F (175°C).
Line two baking sheets with parchment paper or silicone baking mats.
3. Cream the butter and sugars
Place the softened butter, brown sugar, and granulated sugar in a large mixing bowl.
Beat with an electric mixer for approximately 2–3 minutes, until light and creamy.
Scrape down the sides of the bowl as needed.
4. Add the eggs and vanilla
Add the eggs one at a time, beating well after each addition.
Add the vanilla extract and mix until combined.
The mixture should look smooth and creamy.
5. Mix the dry ingredients
In a separate bowl, whisk together:
- Flour
- Baking soda
- Salt
- Cinnamon
- Nutmeg, if using
This ensures the baking soda and spices are evenly distributed.
6. Combine wet and dry ingredients
Gradually add the dry mixture to the butter mixture.
Mix on low speed just until the flour disappears.
Don’t overmix.
7. Add oats and raisins
Add the rolled oats and drained raisins.
If using nuts, add them now.
Fold everything together with a spatula until evenly distributed.
The dough should be thick and slightly sticky.
8. Chill the dough
Cover the bowl and refrigerate for approximately 30 minutes.
Chilling helps prevent the cookies from spreading too much and gives them a thicker, chewier texture.
🍪 Bake the Cookies
9. Scoop the dough
Scoop approximately 2 tablespoons of dough for each cookie.
Place them on the prepared baking sheets, leaving about 2 inches (5 cm) between each cookie.
Gently shape them into round balls.
10. Bake
Bake at 350°F (175°C) for approximately 10–12 minutes.
The edges should be lightly golden while the centers still look slightly soft.
Don’t wait for the centers to look completely baked. They’ll continue cooking on the hot baking sheet after you remove them from the oven.
11. Cool
Allow the cookies to cool on the baking sheet for 5 minutes.
Then carefully transfer them to a wire rack.
They will firm up as they cool while remaining soft and chewy inside.
⭐ Tips for the Best Oatmeal Raisin Cookies
Use old-fashioned oats
They provide a much better chewy texture than quick oats.
Don’t overbake
Slightly underbaked centers are the secret to soft cookies.
Plump your raisins
Soaking them briefly in hot water makes a noticeable difference.
Chill the dough
This helps control spreading and develops the flavor.
Use room-temperature butter
It creams properly with the sugar and creates the right cookie texture.
🍂 Delicious Variations
Oatmeal Raisin Walnut
Add ½–¾ cup toasted walnuts for extra crunch.
Apple Cinnamon
Add ½ cup finely diced dried apples along with the raisins.
Chocolate Chip Oatmeal Cookies
Replace half the raisins with ½ cup chocolate chips.
Coconut Oatmeal Cookies
Add ½ cup shredded coconut.
Cranberry Oatmeal Cookies
Replace the raisins with dried cranberries and add a little orange zest.
🧊 Storage
Store completely cooled cookies in an airtight container at room temperature for 4–5 days.
For softer cookies, place a small piece of bread in the container. The cookies will absorb some of its moisture.
You can also freeze the baked cookies for up to 2–3 months.
❄️ Make-ahead option
Scoop the unbaked dough into individual balls and freeze them on a tray.
Once solid, transfer them to a freezer bag.
When you’re ready for cookies, bake them directly from frozen, adding approximately 2–3 extra minutes to the baking time.
🍪 Best bite
For the ultimate oatmeal raisin cookie, eat one while it’s still slightly warm, with a cold glass of milk. The center should be soft and chewy, while the edges have just enough crispness.
