No-Bake Walnut Chocolate Bites
Rich, fudgy, and naturally chewy, these easy chocolate walnut bites come together without an oven. They’re packed with walnuts, cocoa, oats, and a touch of honey for a satisfying little treat.Makes: 18–20 bites

Ingredients
- 1 cup (115 g) walnuts
- ¾ cup (65 g) rolled oats
- ½ cup (45 g) unsweetened cocoa powder
- ⅓ cup (80 g) creamy peanut butter or almond butter
- ¼ cup (60 ml) honey or maple syrup
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 2 tablespoons milk or unsweetened almond milk
- 2 tablespoons mini chocolate chips, optional
Optional coating
- ¼ cup finely chopped walnuts
- 2 tablespoons unsweetened shredded coconut
- 2 tablespoons cocoa powder
- Melted dark chocolate for drizzling
1. Grind the walnuts and oats
Place the walnuts and rolled oats in a food processor.
Pulse several times until finely chopped.
Don’t process them into a completely smooth flour—you want some tiny pieces of walnut remaining for texture.
2. Add the cocoa
Add the cocoa powder and salt.
Pulse a few more times until evenly combined.
3. Add the wet ingredients
Add:
- Peanut butter or almond butter
- Honey or maple syrup
- Vanilla
- Milk
Process until the mixture begins to clump together.
It should be moist enough to hold when squeezed.
If it seems too dry, add another teaspoon of milk at a time.
If it’s too sticky, add a tablespoon of ground oats or walnuts.
4. Add chocolate chips
Transfer the mixture to a bowl.
Fold in the mini chocolate chips if using.
For extra chocolate flavor, use mini dark chocolate chips.
5. Form the bites
Scoop about 1 tablespoon of mixture at a time.
Roll between your palms to form small balls.
Place them on a parchment-lined plate or tray.
6. Coat the bites
Roll each bite in finely chopped walnuts, coconut, or cocoa powder.
You can also leave them plain.
For a more decadent finish, drizzle melted dark chocolate over the tops.
7. Chill
Refrigerate for 30–60 minutes.
The bites will firm up as the oats and walnuts absorb some of the moisture.
Chocolate Coconut Version
Add ¼ cup unsweetened shredded coconut directly to the mixture.
Roll the finished bites in additional coconut.
A tiny amount of coconut extract can also give them a stronger coconut flavor.
Double Chocolate Walnut Bites
Add:
- 2 tablespoons melted dark chocolate
- ¼ cup mini chocolate chips
Reduce the milk slightly if the mixture becomes too soft.
Drizzle the finished bites with more melted chocolate.
Date-Sweetened Version
Replace the honey with:
- 1 cup pitted soft dates
Process the dates with the walnuts and oats until the mixture becomes sticky and holds together.
Add the cocoa, vanilla, and salt.
This version has a naturally caramel-like sweetness.
Peanut Butter Chocolate Version
Use creamy peanut butter.
Add ¼ teaspoon cinnamon and a pinch of flaky sea salt.
The combination of chocolate, peanut butter, and walnuts makes these especially rich.
Low-Carb Version
For a lower-carb option:
- Replace the oats with additional finely ground walnuts or unsweetened coconut.
- Use a low-carb powdered sweetener instead of honey.
- Choose unsweetened nut butter.
- Use unsweetened dark chocolate or sugar-free chocolate chips.
Because the texture changes when oats are removed, add the liquid gradually.
Protein Version
Add 2–3 tablespoons chocolate or vanilla protein powder.
You may need another tablespoon or two of milk to achieve the correct consistency.
Storage
Store the bites in an airtight container in the refrigerator for up to 1 week.
They can also be frozen for up to 2 months.
Let frozen bites sit at room temperature for about 10 minutes before eating.
Texture tip
For the best bites, don’t pulverize the walnuts completely. Leaving some tiny walnut pieces gives them a satisfying crunch against the soft, fudgy chocolate center.
