Ingredients
Strawberry filling
- 1½ lbs (680 g) fresh strawberries
- 2 tbsp granulated sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
Cream filling
- 3 cups (720 ml) cold heavy whipping cream
- 8 oz (225 g) cream cheese, softened
- ¾ cup (90 g) powdered sugar
- 2 tsp vanilla extract
- ¼ tsp salt
For layering
- 2 packages (about 14–16 oz / 400–450 g) graham crackers
- ½ cup strawberry jam, optional
For decoration
- 4–5 fresh strawberries
- 2 tbsp crushed graham crackers
- Powdered sugar, optional
- Fresh mint, optional
Instructions
1. Prepare the strawberries
Wash and thoroughly dry the strawberries.
Remove the stems.
Slice most of the strawberries into thin slices, reserving a few whole or halved berries for decorating.
Place the sliced strawberries in a bowl.
Add the granulated sugar, lemon juice, and vanilla.
Gently toss and let them sit for 10–15 minutes.
This draws out some of the natural strawberry juices and makes the fruit more flavorful.
Make the Cream
2. Beat the cream cheese
Place the softened cream cheese in a large mixing bowl.
Beat until completely smooth.
Add the powdered sugar, vanilla, and salt.
Beat again until creamy.
3. Whip the cream
In a separate chilled bowl, beat the cold heavy cream until it reaches soft peaks.
Don’t overwhip it.
4. Combine
Add approximately one-third of the whipped cream to the cream cheese mixture.
Fold gently to loosen it.
Add the remaining whipped cream in two additions.

5. Prepare the dish
Use a 9×13-inch (23×33 cm) baking dish.
Spread a very thin layer of the cream mixture over the bottom.
This keeps the first layer of graham crackers in place.
6. Add the first cracker layer
Arrange graham crackers in a single layer across the bottom.
Break a few crackers as necessary to fill the gaps.
It’s fine if you need to overlap them slightly.
7. Add cream
Spread approximately ⅓ of the cream mixture over the crackers.
Smooth it into an even layer.
8. Add strawberries
Arrange approximately ⅓ of the sliced strawberries over the cream.
Press them gently into the cream so they stay in place.
9. Repeat
Continue layering:
- Graham crackers
- Cream
- Strawberries
- Graham crackers
- Cream
- Strawberries
Finish with a generous layer of cream on top.
If using strawberry jam, spread a thin layer over one of the graham cracker layers before adding the cream.
Finish the Cake
10. Decorate
Arrange the reserved strawberries over the top.
Sprinkle with crushed graham crackers.
Add a light dusting of powdered sugar if desired.
A few small mint leaves make a beautiful finishing touch.
11. Refrigerate
Cover the dish tightly with plastic wrap.
Refrigerate for at least 6 hours, preferably overnight.
This resting time is essential.
