This elegant no-bake dessert combines a light, creamy mint mousse with ribbons of dark chocolate and a crisp chocolate crunch. The cool mint cuts through the richness of the chocolate, while the crunchy topping adds a satisfying contrast to the soft, airy whip.

It looks impressive served in individual glasses, but it’s surprisingly easy to prepare.

Ingredients

For the mint marble whip

  • 8 oz (225 g) cream cheese, softened
  • ½ cup (100 g) granulated sugar
  • 1 tsp vanilla extract
  • ½–1 tsp peppermint extract, to taste
  • 2 tbsp milk or heavy cream
  • 1½ cups (360 ml) heavy whipping cream, very cold
  • 2–3 drops green food coloring, optional
  • ¼ cup finely chopped dark chocolate or chocolate shavings

For the dark chocolate crunch

  • 4 oz (115 g) dark chocolate, chopped
  • 1 tbsp unsalted butter
  • 1 cup (80 g) crispy rice cereal
  • ½ cup (55 g) chopped almonds, pecans, or hazelnuts
  • 1 tbsp cocoa powder
  • 1 tbsp powdered sugar
  • Pinch of salt

For the chocolate drizzle

  • 2 oz (55 g) dark chocolate
  • 1 tsp coconut oil or butter

Optional garnish

  • Fresh mint leaves
  • Dark chocolate curls
  • Crushed peppermint candies
  • Cocoa powder
  • Whipped cream
  • Finely chopped pistachios

Instructions

1. Make the dark chocolate crunch

Line a baking sheet or large plate with parchment paper.

Place the chopped dark chocolate and butter in a heatproof bowl.

Melt them gently in the microwave in 15–20 second intervals, stirring between each interval.

Alternatively, place the bowl over a saucepan of gently simmering water and stir until smooth.

Don’t overheat the chocolate.

Once completely melted, remove it from the heat.

2. Add the crunchy ingredients

Add the crispy rice cereal, chopped nuts, cocoa powder, powdered sugar, and salt to the melted chocolate.

Gently fold everything together.

Make sure the cereal and nuts are evenly coated without crushing the cereal too much.

Spread the mixture onto the parchment-lined tray.

Use the back of a spoon to spread it into a fairly thin layer.

Refrigerate for approximately 20–30 minutes, or until completely firm.

3. Break up the crunch

Once the chocolate has hardened, break the mixture into small irregular pieces.

Don’t crush it into crumbs.

A combination of small chunks and larger pieces gives the dessert a much better texture.

Set aside a few of the nicest pieces for garnishing.

Making the Mint Whip

4. Beat the cream cheese

Place the softened cream cheese in a large mixing bowl.

Add the granulated sugar, vanilla extract, peppermint extract, and milk or heavy cream.

Beat with a hand mixer for approximately 2–3 minutes, until completely smooth and creamy.

Scrape down the sides of the bowl as needed.

Taste the mixture.

Peppermint extract can be surprisingly strong, so add it gradually.

You want a noticeable mint flavor without making the dessert taste like toothpaste.

5. Whip the cream

In a separate chilled bowl, add the cold heavy whipping cream.

Beat on medium-high speed until soft peaks form.

The cream should hold its shape when you lift the beaters but still look smooth and creamy.

Don’t overwhip it.

6. Combine the mixtures

Add approximately one-third of the whipped cream to the cream cheese mixture.

Gently fold it in to lighten the mixture.

Add the remaining whipped cream in two additions, folding gently after each addition.

Use a spatula rather than a mixer at this stage.

Gentle folding preserves the air in the whipped cream and gives the finished dessert its light, mousse-like texture.

7. Create the marble effect

Add the optional green food coloring to one portion of the mixture.

Rather than coloring the entire dessert completely green, use just a few drops.

You want a pale mint color.

Take a little of the green mixture and fold it loosely through the white mint cream.

Don’t completely mix it.

The goal is to create soft green and white ribbons throughout the whip.

For an extra chocolate element, gently fold in ¼ cup finely chopped dark chocolate.

Assemble the Dessert

8. Layer the chocolate crunch

Choose six to eight dessert glasses, small jars, or ramekins.

Place a layer of dark chocolate crunch in the bottom of each glass.

Use approximately 1–2 tablespoons per serving.

Don’t press it down too firmly.

You want some space between the pieces so the crunch remains distinct.

9. Add the mint whip

Spoon or pipe the mint whip over the chocolate crunch.

Fill each glass approximately three-quarters full.

For a more elegant appearance, use a piping bag fitted with a large round tip.

10. Add another layer

Add another small layer of chocolate crunch.

Then add another layer of mint whip.

Repeat until the glasses are filled.

Finish with a small amount of dark chocolate crunch on top.

11. Add the chocolate drizzle

Melt the remaining dark chocolate with the coconut oil or butter.

Drizzle it very lightly over the tops of the desserts.

You can create thin chocolate lines by dipping a fork into the melted chocolate and moving it quickly back and forth over the glasses.

12. Chill

Cover the glasses loosely with plastic wrap.

Refrigerate for at least 2–3 hours.

For the best texture, chill them overnight.

The mint whip will become firmer and the flavors will develop.

Finishing Touches

Just before serving, garnish each dessert with:

  • A small mint leaf
  • Dark chocolate curls
  • A piece of chocolate crunch
  • A tiny sprinkle of crushed peppermint
  • A light dusting of cocoa powder

For a more sophisticated presentation, keep the garnish minimal—a mint leaf and one large piece of chocolate crunch are enough.

Tips for the Perfect Mint Whip

Use cold heavy cream

Cold cream whips much more easily and holds its shape better.

For especially good results, chill the mixing bowl and beaters for 10 minutes before whipping.

Don’t overmix

Once the whipped cream is folded into the cream cheese mixture, mix gently.

Overmixing can deflate the whipped cream and make the dessert heavier.

Be careful with peppermint extract

Start with ½ teaspoon, taste, and add more if necessary.

Peppermint extracts vary considerably in strength.

Don’t make the crunch too fine

Large crunchy pieces provide a much better contrast with the soft mint whip.

You want a mixture of crisp cereal, chocolate-coated nuts, and irregular chocolate pieces.

Make-Ahead Instructions

This dessert is excellent for entertaining because most of it can be prepared ahead.

The chocolate crunch can be made up to 5 days ahead and stored in an airtight container at room temperature.

The mint whip can be prepared and assembled into the glasses up to 24 hours ahead.

Keep the finished desserts refrigerated.

For the best crunch, reserve some chocolate crunch pieces and add them immediately before serving.

Flavor Variations

Andes-Style Mint Chocolate

Add finely chopped mint chocolate candies to the cream mixture and use dark chocolate crunch between the layers.

Peppermint Chocolate Crunch

Add crushed peppermint candies to the chocolate crunch.

This gives you a crisp, cool peppermint flavor and a festive appearance.

Pistachio Mint

Replace the nuts in the chocolate crunch with pistachios.

The green pistachios complement the mint beautifully.

Espresso Dark Chocolate

Add ½ tsp instant espresso powder to the melted dark chocolate.

The coffee intensifies the chocolate flavor without making the dessert taste strongly like coffee.

Orange Dark Chocolate

Add 1 tsp finely grated orange zest to the chocolate crunch.
