🍫 MawMaw Hamrick’s Chocolate Pie
A classic Southern-style chocolate pie with a creamy homemade chocolate filling and flaky crust.
Ingredients
For the pie:
-
1 unbaked 9-inch pie crust
-
1½ cups granulated sugar
-
⅓ cup unsweetened cocoa powder
-
¼ cup all-purpose flour
-
¼ tsp salt
-
2 cups whole milk
-
4 large egg yolks
-
2 tbsp butter
-
1 tsp vanilla extract
For the meringue:
-
4 large egg whites
-
¼ tsp cream of tartar
-
½ cup granulated sugar
-
1 tsp vanilla extract
Instructions
-
Bake the crust: Preheat the oven to 375°F (190°C). Blind-bake the pie crust according to its package or recipe instructions. Let it cool slightly.
-
Make the chocolate filling: In a saucepan, whisk together sugar, cocoa, flour, and salt. Gradually whisk in the milk until smooth.
-
Temper the eggs: Whisk the egg yolks in a separate bowl. Slowly add about 1 cup of the warm milk mixture while whisking constantly. Pour the egg mixture back into the saucepan.
-
Cook: Cook over medium heat, stirring constantly, until the filling becomes thick and begins to bubble—about 7–10 minutes.
-
Add flavor: Remove from the heat and stir in butter and vanilla.
-
Fill the crust: Pour the hot chocolate filling into the baked crust.
-
Make the meringue: Beat egg whites and cream of tartar until foamy. Gradually add sugar and continue beating until stiff, glossy peaks form. Beat in vanilla.
-
Top the pie: Spread the meringue over the hot filling, making sure it reaches the crust edges.
-
Bake: Bake at 350°F (175°C) for about 10–15 minutes, until the meringue is lightly golden.
-
Cool completely: Let the pie cool at room temperature, then refrigerate for several hours before slicing.
MawMaw-Style Tip ❤️
For that old-fashioned homemade texture, don’t rush the custard. Keep stirring while it thickens and cook it until it coats the back of a spoon. Pouring it into the crust while it’s still hot also helps the filling set properly beneath the meringue.
