Ingredients

Banana cream filling

  • 2 large ripe bananas
  • 1½ cups (360 g) nonfat Greek yogurt
  • ½ cup (120 ml) unsweetened almond milk
  • 1 package (about 1 oz/28 g) sugar-free instant vanilla pudding mix
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 1 teaspoon fresh lemon juice
  • Pinch of salt

Optional topping

  • ½ cup light whipped topping
  • 1 small banana, thinly sliced
  • 2 tablespoons crushed graham crackers
  • Light dusting of cinnamon

1. Prepare the bananas

Peel the two ripe bananas.

Place them in a blender or food processor.

Add the lemon juice.

Blend until completely smooth.

The lemon juice adds brightness and helps slow browning.

2. Make the cream mixture

Add the Greek yogurt, almond milk, pudding mix, vanilla, cinnamon, and salt to the blender.

Blend for about 20–30 seconds, until smooth and creamy.

The mixture will thicken quickly because of the pudding mix.

If it’s too thick to blend easily, add another tablespoon or two of almond milk.

3. Layer the dessert

Divide the banana cream between 6 small dessert glasses or ramekins.

For a layered banana cream pie effect, add:

  1. A spoonful of crushed graham crackers
  2. Banana cream
  3. A few thin banana slices
  4. More banana cream

Repeat until the glasses are filled.

4. Chill

Cover and refrigerate for at least 1–2 hours.

The filling will become thicker and more pudding-like as it chills.

5. Finish

Just before serving, add a small dollop of light whipped topping.

Finish with a few banana slices, graham cracker crumbs, and a sprinkle of cinnamon.

Extra-Protein Version

For a more filling dessert, use:

  • 2 cups nonfat Greek yogurt
  • 2 bananas
  • ½ cup unsweetened almond milk
  • Sugar-free vanilla pudding mix
  • Vanilla extract

You can also add ½ scoop vanilla protein powder.

Add an extra splash of almond milk if needed.

Banana Cream Pie Version

For a stronger pie flavor, add ½ cup crushed graham crackers to the bottom of each serving dish.

Top with banana cream and refrigerate.

For an even more authentic pie taste, lightly toast the graham cracker crumbs in a dry skillet for 2–3 minutes before using.

Chocolate Banana Version

Add 1 tablespoon unsweetened cocoa powder to the filling.

Use chocolate graham cracker crumbs as the base.

Top with banana slices and a little light whipped topping.

Peanut Butter Banana Version

Stir 1 tablespoon powdered peanut butter into the filling.

Add another teaspoon or two for stronger peanut flavor.

Top with a small sprinkle of powdered peanut butter and crushed graham crackers.

The banana-peanut butter combination makes this taste much more indulgent than it is.
