Total time: About 35 minutes
Servings: 4

This low-carb crustless pizza bowl has all the best parts of pizza—savory seasoned meat, rich tomato sauce, gooey melted cheese, peppers, mushrooms, and classic Italian herbs—without the crust. Everything is layered into a baking dish and finished until bubbling and golden.

It’s easy enough for a weeknight dinner and flexible enough to customize with your favorite pizza toppings.

Ingredients

For the meat layer

  • 1 lb (450 g) ground beef
  • ½ lb (225 g) Italian sausage, mild or hot
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp dried oregano
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes, optional

For the pizza bowl

  • 1 cup (240 g) low-sugar pizza sauce or marinara sauce
  • 1½ cups shredded mozzarella cheese
  • ½ cup shredded cheddar or provolone
  • ½ cup sliced mushrooms
  • ½ green bell pepper, diced
  • ½ red bell pepper, diced
  • ¼ cup sliced black olives, optional
  • ¼ cup sliced pepperoni, optional
  • 2 tbsp grated Parmesan
  • 1 tbsp chopped fresh parsley or basil

Optional toppings

  • Banana peppers
  • Jalapeños
  • Fresh tomatoes
  • Spinach
  • Cooked bacon
  • Diced ham
  • Italian sausage
  • Extra mozzarella
  • Crushed red pepper
  • Garlic powder

Instructions

1. Prepare the oven

Preheat your oven to 400°F (200°C).

Lightly grease a 9×13-inch baking dish or four individual oven-safe bowls.

If you’re making individual bowls, choose dishes that can safely withstand high oven temperatures.

2. Brown the meat

Heat a large skillet over medium-high heat.

Add the ground beef and Italian sausage.

Cook for approximately 7–9 minutes, breaking the meat apart with a wooden spoon as it cooks.

Continue until the meat is browned and no longer pink.

If there is a large amount of excess grease, carefully drain some of it.

Leave a little behind for flavor.

3. Add the aromatics

Add the diced onion to the skillet.

Cook for approximately 3–4 minutes, stirring occasionally, until softened.

Add the minced garlic and cook for another 30–60 seconds.

Don’t let the garlic burn.

4. Season the meat

Add the Italian seasoning, oregano, smoked paprika, salt, black pepper, and red pepper flakes if using.

Stir thoroughly.

Cook for another 30 seconds to allow the spices to become fragrant.

At this point, the meat should smell like a flavorful pizza topping.

5. Add the vegetables

Add the mushrooms and diced bell peppers.

Cook for approximately 4–5 minutes, stirring occasionally.

The vegetables should soften slightly while retaining a little bite.

If you’re using spinach, add it during the final minute and cook just until wilted.

6. Add the pizza sauce

Reduce the heat to low.

Pour in the pizza sauce or marinara.

Stir until the sauce is evenly distributed throughout the meat and vegetables.

Allow everything to simmer for approximately 2–3 minutes.

Taste the mixture and adjust the seasoning.

If your sauce is already salty, you may not need additional salt.

7. Build the pizza bowl

Transfer the meat mixture to your prepared baking dish.

Spread it into an even layer.

Scatter the sliced olives and pepperoni over the top if using.

Sprinkle the mozzarella and cheddar or provolone evenly over everything.

Finish with the grated Parmesan.

For an especially cheesy top, add another small handful of mozzarella.

8. Bake

Place the baking dish in the preheated oven.

Bake for approximately 12–15 minutes, until the cheese is completely melted and bubbling around the edges.

For a golden, lightly browned top, switch the oven to broil for the final 1–2 minutes.

Watch it carefully during broiling because cheese can go from golden to burnt very quickly.

9. Rest before serving

Remove the pizza bowl from the oven.

Let it rest for approximately 5 minutes.

This gives the sauce a chance to settle and makes the bowl easier to serve.

Finish with fresh basil or parsley, freshly cracked black pepper, and a sprinkle of red pepper flakes if you like some heat.

Best Topping Combinations

  • Mushrooms

  • Olives
  • Onion

You can also add roasted eggplant or artichoke hearts.

Spicy Pizza Bowl

Add:

  • Hot Italian sausage
  • Pepperoni
  • Jalapeños

  • Hot banana peppers

Finish with a little chili oil after baking.

Tips for a Better Pizza Bowl

Choose a low-sugar sauce

Since there’s no crust, the sauce is one of the main sources of carbohydrates.

Check the nutrition label on your pizza sauce or marinara and choose one with minimal added sugar if you’re specifically keeping the meal low-carb.

Drain excess grease

If you’re using sausage and ground beef together, there may be quite a bit of rendered fat.

Drain the excess before adding the sauce so the finished bowl isn’t greasy.

Don’t overcook the vegetables

The vegetables will continue cooking in the oven.

Sauté them until just tender rather than completely soft.

Get the cheese golden

A brief broil at the end gives the top that irresistible browned, bubbly pizza-cheese appearance.

Stay close to the oven while broiling.

Make-Ahead Version

You can prepare the entire meat and vegetable mixture up to 2 days ahead.

Store it covered in the refrigerator.

When you’re ready to eat, place the mixture in a baking dish, add the cheese, and bake until hot and bubbling.

If the mixture is very cold, it may need an additional 5–10 minutes in the oven.

Storage

Store leftovers in an airtight container in the refrigerator for 3–4 days.

Reheat individual portions in the microwave or in a covered skillet over medium-low heat.

For the best cheese texture, reheat in a 350°F (175°C) oven until hot.

You can also freeze the cooked pizza bowl for up to 2–3 months in a freezer-safe container.

Thaw overnight in the refrigerator before reheating.

Serving Ideas

Because the bowl is already rich and cheesy, pair it with something fresh and crisp:

  • Green salad with Italian dressing
  • Cucumber and tomato salad
  • Roasted broccoli
  • Garlic-seasoned zucchini
  • Steamed green beans
  • Caesar salad without croutons

For an extra pizza-shop feel, serve it with Parmesan, fresh basil, crushed red pepper, and a small drizzle of olive oil.

Easy Formula for Customizing It

Think of the bowl in four layers:

Sauce → protein → vegetables → cheese

Choose one or two ingredients from each category, bake until bubbling, and you’ve essentially created your own low-carb pizza without needing a crust.
