Ingredients

Lemon whip

  • 8 oz (225 g) cream cheese, softened
  • ½ cup (100 g) powdered sugar
  • 1 tablespoon finely grated lemon zest
  • ¼ cup (60 ml) fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup (240 ml) cold heavy whipping cream
  • ½ cup (120 g) Greek yogurt
  • Pinch of salt

Blueberry layer

  • 1½ cups (225 g) fresh blueberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1 tablespoon water

For the topping

  • ½ cup fresh blueberries
  • Lemon zest
  • Whipped cream
  • Crushed graham crackers or digestive biscuits
  • Optional white chocolate shavings

1. Make the blueberry sauce

Add the blueberries, sugar, and lemon juice to a small saucepan.

Cook over medium heat for 5–7 minutes, stirring occasionally.

Gently crush some of the berries while leaving a few whole.

Mix the cornstarch with the water until smooth.

Stir it into the blueberries.

Cook for another 1–2 minutes, until the mixture becomes glossy and thick.

Remove from the heat and let it cool completely.

Important: The blueberry mixture must be cool before adding it to the whipped cream.

2. Make the lemon cream

Beat the softened cream cheese in a large bowl until completely smooth.

Add the powdered sugar and beat until creamy.

Add the lemon zest, lemon juice, vanilla, Greek yogurt, and salt.

Beat until smooth and fluffy.

Taste the mixture.

If you want it more lemony, add another teaspoon of zest.

3. Whip the cream

In a separate chilled bowl, beat the heavy cream until medium-stiff peaks form.

Don’t overbeat.

The cream should be thick, fluffy, and smooth.

4. Fold everything together

Add about one-third of the whipped cream to the lemon cream cheese mixture.

Fold gently.

Add the remaining whipped cream in two additions.

Continue folding until the mixture is light and airy.

Don’t use an electric mixer after adding the whipped cream.

5. Create the blueberry swirl

Reserve about ¼ cup of the blueberry sauce for the topping.

Gently fold the remaining blueberry sauce into the lemon whip.

Don’t completely mix it in.

A few swirls of purple-blue through the pale lemon cream give the dessert its beautiful marbled appearance.

6. Assemble

Spoon the lemon blueberry whip into individual dessert glasses or one large serving bowl.

For individual cups, you can layer:

  1. Graham cracker crumbs
  2. Lemon whip
  3. Blueberry sauce
  4. More lemon whip
  5. Fresh blueberries

Repeat as desired.

7. Chill

Cover and refrigerate for at least 1–2 hours.

For the best texture, chill overnight.

The whip will become slightly firmer while remaining soft and creamy.

8. Finish and serve

Just before serving, add:

  • Fresh blueberries
  • A drizzle of blueberry sauce
  • Fine lemon zest
  • Graham cracker crumbs
  • A small swirl of whipped cream

For an elegant finish, add a thin curl of lemon peel.

Extra Creamy Version

For a richer, cheesecake-like whip, use:

  • 12 oz (340 g) cream cheese
  • ½ cup Greek yogurt
  • 1¼ cups heavy cream
  • ¾ cup powdered sugar
  • Lemon zest and juice

This creates a thicker, more luxurious dessert.

Lighter Lemon Blueberry Whip

For a lighter version, use:

  • 4 oz (115 g) cream cheese
  • 1 cup Greek yogurt
  • ¾ cup whipped cream
  • ¼ cup powdered sugar
  • Lemon zest
  • Lemon juice
  • Fresh blueberries

It will be tangier and lighter while still having a fluffy texture.

Lemon Blueberry Cheesecake Whip

For the full cheesecake effect, make a simple crust layer with:

  • 1½ cups crushed graham crackers
  • 4 tablespoons melted butter
  • 1 tablespoon brown sugar

Mix together and press into the bottom of serving glasses.

Add the lemon blueberry whip on top.

Finish with blueberry sauce and fresh berries.

White Chocolate Lemon Blueberry Whip

Melt 3 oz (85 g) white chocolate.

Let it cool slightly, then beat it into the cream cheese mixture before folding in the whipped cream.

The white chocolate adds richness and helps the whip set more firmly.

Storage

Keep covered and refrigerated.

The dessert is best within 2–3 days.

For the best crunch, keep the graham cracker crumbs separate and sprinkle them on immediately before serving.

Best Texture Tip

For an especially fluffy result, make sure the cream cheese is room temperature but the heavy cream is very cold.

Beat the cream cheese until perfectly smooth before adding the whipped cream, and then fold gently rather than stirring.

The finished dessert should be silky lemon cream with ribbons of vibrant blueberry, soft enough to spoon but firm enough to hold its shape.
