High-Protein Blueberry Weetabix Cheesecake Overnight

This easy overnight breakfast combines crushed Weetabix, creamy Greek yogurt, cottage cheese, and juicy blueberries into a cheesecake-inspired breakfast. It’s naturally filling, high in protein, and requires no baking.
Ingredients
Weetabix base
- 2 Weetabix biscuits
- ½ cup (120 ml) milk of choice
- 1 tsp honey or maple syrup
- ½ tsp vanilla extract
- ¼ tsp cinnamon
Cheesecake layer
- 1 cup (225 g) cottage cheese
- ¾ cup (170 g) plain Greek yogurt
- 1–2 tbsp honey or maple syrup
- ½ tsp vanilla extract
- 1 tsp lemon juice
- 1 tbsp vanilla or unflavored protein powder, optional
Blueberry layer
- 1 cup fresh or frozen blueberries
- 1 tsp honey or maple syrup
- 1 tsp lemon juice
- 1 tsp chia seeds, optional
For topping
- Fresh blueberries
- 1–2 tbsp Greek yogurt
- Lemon zest
- Crushed Weetabix
- A small drizzle of honey
Instructions
1. Make the blueberry layer
Add the blueberries, honey, and lemon juice to a small saucepan.
Cook over medium-low heat for 4–6 minutes, stirring occasionally, until the berries soften and release their juices.
For a thicker topping, lightly mash some of the blueberries with the back of a spoon.
Stir in the chia seeds if using.
Remove from the heat and allow the mixture to cool.
You can also use fresh blueberries without cooking them for a quicker version.
2. Prepare the Weetabix base
Break the Weetabix into a bowl or directly into your serving jars.
Pour over the milk.
Add the honey, vanilla, and cinnamon.
Mash everything together with a fork until you have a soft, thick mixture.
Divide between two glasses or jars.
Press the mixture gently into the bottom to create an even base.
3. Make the cheesecake mixture
Add the cottage cheese, Greek yogurt, honey, vanilla, and lemon juice to a blender.
Blend for 30–60 seconds, until completely smooth and creamy.
If using protein powder, add it and blend briefly again.
For a slightly textured cheesecake filling, you can simply whisk the ingredients together instead of blending.
4. Add the cheesecake layer
Divide the cheesecake mixture between the two jars.
Spread it gently over the Weetabix base.
5. Add the blueberries
Spoon the cooled blueberry mixture over the cheesecake layer.
You can leave it as a distinct layer or gently swirl it through the top.
6. Chill overnight
Cover the jars and refrigerate for at least 6 hours, preferably overnight.
During this time, the Weetabix softens and absorbs the milk while the cheesecake layer becomes thicker and creamier.
Serve
In the morning, top each cheesecake with:
- Fresh blueberries
- A spoonful of Greek yogurt
- Crushed Weetabix
- Lemon zest
- A light drizzle of honey
Serve chilled.
Higher-Protein Version
For an even higher-protein breakfast:
- Use high-protein Greek yogurt.
- Add 1 scoop of vanilla protein powder to the cheesecake layer.
- Use high-protein milk.
- Increase the cottage cheese to 1¼ cups.
If the mixture becomes too thick after adding protein powder, loosen it with 1–2 tablespoons of milk.
Lemon Blueberry Cheesecake
For a brighter cheesecake flavor, add:
- 1 tsp additional lemon zest
- 1 tbsp additional lemon juice
You can also mix a little lemon zest into the Weetabix base.
Blueberry Swirl Version
Instead of keeping the layers separate, add half the cheesecake mixture to the jars, followed by a spoonful of blueberry sauce.
Add the remaining cheesecake mixture and finish with another spoonful of blueberries.
Use a skewer or knife to gently swirl the layers together.
No-Cook Version
If you don’t want to cook the blueberries, simply mash:
- 1 cup blueberries
- 1 tsp honey
- 1 tsp lemon juice
with a fork.
Fold in 1 tsp chia seeds and let the mixture stand for 10–15 minutes to thicken.
Storage
Keep covered in the refrigerator for up to 3 days.
For the best texture, add crunchy toppings such as crushed Weetabix immediately before eating.
Best Combination
For the ultimate version, use vanilla Greek yogurt, blended cottage cheese, vanilla protein powder, lemon zest, and a homemade blueberry compote over the softened Weetabix base. The result tastes like a creamy blueberry cheesecake while working beautifully as a filling overnight breakfast.
