🛒 Ingredients

  • 2 cups (180 g) rolled oats
  • ½ cup (60 g) ground flaxseed
  • ¼ cup (35 g) sunflower seeds
  • ¼ cup (35 g) pumpkin seeds
  • 1 tsp baking soda
  • ½ tsp salt
  • 3 large eggs
  • ¾ cup (180 g) plain Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • ¼ cup (60 ml) water, plus more if needed
  • 1 tbsp honey (optional)

Optional topping

  • 1 tbsp sunflower seeds
  • 1 tbsp pumpkin seeds
  • 1 tbsp rolled oats
  • Sesame seeds

👩‍🍳 Instructions

1. Prepare the oven and pan

Preheat your oven to 350°F (175°C).

Line an 8 × 4-inch (20 × 10 cm) loaf pan with parchment paper, leaving some paper hanging over the sides for easy removal.

Lightly grease the parchment.

2. Grind the oats

Place the rolled oats in a blender or food processor.

Pulse until they become a fine, flour-like meal.

You don’t need to make them perfectly smooth, but the finer they are, the more bread-like the texture will be.

3. Mix the dry ingredients

In a large bowl, combine:

  • Ground oats
  • Ground flaxseed
  • Sunflower seeds
  • Pumpkin seeds
  • Baking soda
  • Salt

Stir thoroughly.

4. Mix the wet ingredients

In a separate bowl, whisk together the eggs, Greek yogurt, olive oil, apple cider vinegar, water, and honey if using.

Whisk until smooth.

5. Combine everything

Pour the wet mixture into the dry ingredients.

Stir with a spatula until everything is thoroughly combined.

The mixture should be thick and spoonable, similar to a very thick batter.

Let it sit for 10 minutes.

The oats and flaxseed will absorb some of the liquid and the mixture will become noticeably thicker.

If it seems extremely dry, add another 1–2 tablespoons of water.

6. Transfer to the pan

Spoon the mixture into the prepared loaf pan.

Press it down gently and smooth the top with a spatula.

Sprinkle with additional oats and seeds if desired.

7. Bake

Place the loaf in the center of the oven.

Bake for approximately 35–40 minutes.

The bread is ready when:

  • The top is golden brown.
  • It feels firm when gently pressed.
  • A toothpick inserted into the center comes out mostly clean.
  • The loaf has pulled slightly away from the sides of the pan.

8. Cool completely

Allow the bread to cool in the pan for 10–15 minutes.

Then lift it out using the parchment paper.

Place it on a wire rack and let it cool completely before slicing.

This is important because the inside continues to set as it cools.

9. Slice and serve

Use a sharp serrated knife to cut the loaf into approximately 10 slices.

Toast the slices for an especially delicious nutty, crispy texture.

This bread is delicious topped with:

  • Avocado and a pinch of salt
  • Cottage cheese and tomatoes
  • Peanut or almond butter
  • Cream cheese and berries
  • Eggs and avocado
  • Hummus and cucumber
  • Butter and a little honey

⭐ Tips for Better Flourless Bread

Don’t skip the resting time. The flax and oats need time to absorb the liquid.

Cool completely before slicing. Cutting it while hot can make the center seem gummy.

Grind the oats finely. This produces a more bread-like texture.

Don’t add too much water. The batter should be thick, not pourable.

Toast it. Flourless bread becomes particularly delicious when lightly toasted.

🌻 Easy Variations

Garlic & Herb

Add:

  • 1 tsp garlic powder
  • 1 tsp dried Italian herbs
  • 2 tbsp grated Parmesan

Cinnamon Raisin

Leave out the savory seeds and add:

  • 1 tsp cinnamon
  • ½ cup raisins
  • 1 tbsp honey

Nutty Seed Bread

Add ¼ cup chopped walnuts or almonds and extra sunflower and pumpkin seeds.

Low-Sugar Breakfast Bread

Skip the honey completely and serve toasted with eggs, avocado, or cottage cheese.

Note: This recipe is flourless, but because it uses oats, it is not automatically gluten-free. If you need gluten-free bread, use oats specifically labeled certified gluten-free.
